Delicious Homemade Yogurt Recipes

All you need for this yogurt is a quart of milk, a tablespoon of yogurt with live cultures, a saucepan and a towel.

Ingredients:

  • 1 quart lowfat milk
  • 1 tablespoon yogurt with live cultures

Instructions:

  1. Set a double boiler by placing a metal bowl atop a pot of boiling water, making sure the water doesn’t touch the bottom of the bowl. Heat the milk slowly, whisking periodically, until just before it comes to a boil (between 175-180 degrees). When the milk looks as if it’s about to roll, it’s ready.
  2. Remove the pot from heat and cover with a dish towel. Let it cool to between 100-115 degrees, which takes about 30 minutes or more. The milk should be warm to the touch, but not at all hot (slightly warmer than body temperature).
  3. Then whisk ½ cup of the milk with the yogurt in a separate bowl and add it back to the pot of milk. Wrap the pot with a towel. Preheat an oven to 350 degrees, and once it’s up to temperature, wait one minute and then switch it off. Put the pot in the oven and keep the light on and the door closed.
  4. It can take six to fifteen hours for yogurt to set. Shake the pot gently back and forth – if the yogurt looks firm and not runny, it’s had enough time. A thin yellow layer of whey should have formed on top. You can whisk this back in, or drain it out with cheesecloth, a laundry bag for delicates, or a fine mesh strainer. Just be sure to rinse out any form of strainer you use immediately – it’ll be much easier before any residue has a chance to dry.

Strawberry Frozen Yogurt Recipes

A sweet treat for the summer, this frozen yogurt is made even more fun served floating atop a homemade strawberry sauce.

Ingredients:

  • 2 pints strawberries, hulled and sliced
  • 1/2 cup sugar
  • Juice of 1/2 lemon
  • 1 cup creamy vanilla yogurt
  • 1 cup 2% greek yogurt

Instructions:

  2. Combine the strawberries, sugar and lemon juice in a saucepan and bring to a boil over medium heat. Adjust sweetness if necessary with more sugar. When the sugar is dissolved, lower heat to a simmer and let it cook for about 5 minutes. Remove from heat and chill until completely cool.
  3. Take 1/2 of the sauce and stir together with the vanilla yogurt and Greek yogurt. Pour into the pre-frozen bowl of your ice cream maker and churn for about 30 minutes, or until it has achieved a thick, frozen yogurt consistency. Enjoy immediately or store in a tightly sealed container in the freezer. Serve with remaining strawberry sauce.

Raspberry yogurt popsicles Recipes

Fresh, quick and very versatile as you can put in anything you like really

Ingredients:

  • 500 gr vanilla yogurt
  • 125 gr raspberries
  • 1 tbsp icing sugar

Instructions:

  1. Mix the sugar and the yogurt and taste if it is sweet enough to your liking. You can use any kind of yogurt you like but vanilla yogurt is a little sweeter then most and works nicely here.
  2. Fill your popsicle holders almost to the rim but leave a little space for the raspberries
  3. Puree the raspberries in a blender. You can take the pips out if you want but I left them in.
  4. Add some of your raspberry puree into the popsicle holders and using a wooden stick blend it a bit with your yogurt, so you get a nice texture in the icecream
  5. Freeze for at least 4 hours and your ready to go!

Vanilla Frozen Yogurt Recipe Recipes

Ingredients:

  • 3 cups (720g) strained yogurt (see below) or Greek-style yogurt
  • 3/4 cup (150g) sugar
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Mix together the yogurt, sugar, and vanilla (if using). Stir until the sugar is completely dissolved. Refrigerate 1 hour.
  2. Freeze in your ice cream maker according to the manufacturer's instructions.
  3. To make 1 cup (240g) of strained yogurt, line a mesh strainer with a few layers of cheese cloth. then scrape 16 ounces or 2 cups (480g) of plain whole-milk yogurt into the cheesecloth. Gather the ends and fold them over the yogurt, then refrigerate for at least 6 hours. So, for the above recipe start with and strain 6 cups of yogurt.
  4. Makes about 1 quart.

Yogurt Granita Recipes

The best thing about this icy, tart-and-sweet treat might be how little forethought it requires. You can use any flavored yogurt on hand.

Ingredients:

  • 1 10-ounce package frozen strawberries, thawed (with their juices), or 1 quart fresh strawberries
  • 2 cups fruit yogurt (we're partial to strawberry or lemon)

Instructions:

  1. 1 In a large bowl, smash the strawberries into the yogurt, stirring to combine.
  2. 2 Pour the mixture into a shallow pan (a metal baking pan works) and place it in the freezer, uncovered, for 1 hour.
  3. 3 Remove the pan from the freezer and stir the yogurt well, breaking up any clusters of ice crystals that have formed.
  4. 4 Return it to the freezer. Continue stirring every half hour, breaking up new clusters as they form, until the granita is completely frozen but scoopable, about 2 more hours.
  5. 5 Scoop and serve, garnished with fresh berries, if desired. (Store any leftovers in the freezer in a covered container or resealable plastic bag.)

Homemade Yogurt Recipe Recipes

Ingredients:

  • 4 cup fresh, organic 2% milk
  • 1/3 cup powdered milk
  • 1/2 cup organic yogurt (this will be your starter)

Instructions:

  1. Making yogurt begins with milk. Readers of 101 Cookbooks will not be surprised with the advice to buy organic milk that is fresh as possible. Slowly heat the milk on the stove over low-medium heat.
  2. At this point you can choose to add powdered milk. Powdered milk creates thicker yogurt that takes less time to ferment. It's optional if you are using whole milk or two percent. Some skim and one percent milk include added milk proteins which make the product taste less watery and will behave the same way as if you added powdered milk.
  3. For your first batch we are going to go with two-percent milk plus 1/3 cup of powdered milk. This combination of milk with the powder will produce a delicious, basic yogurt.
  4. The most tedious thing about making yogurt is watching the milk get hot. You need it to hit 170 degrees, but not have it boil. So you want to pay attention to the pot and have a thermometer at hand. Once you've hit the target temperature, remove from heat and then wait for the milk to cool. Unless you put the pot in the refrigerator it will take some time to cool to 108-112 degrees.
  5. If you are using existing yogurt as a starter, have it handy in a cup. When the milk is cooled to the proper temperature, mix a small amount it in with the yogurt. This will break up the yogurt and makes blending it with the rest of the milk easier. Once you add the starter, the milk can be placed in the pre-heated yogurt maker for four to eight hours. Refrigerate before serving. Makes one quart.
