Spicy Chicken Kebabs Recipes

These fresh, spicy kebabs don’t just taste great – the whole family will enjoy making them

Ingredients:

  • 2.0 tbsp vegetable oil
  • 20 cherry tomatoes
  • 3 garlic cloves , roughly chopped
  • 20 button mushrooms
  • 3 spring onions , roughly chopped
  • 1 orange , grated zest and juice
  • 2 large red peppers , seeded and each cut into 10
  • 1.0 tbsp light soy sauce
  • knob of fresh ginger , roughly chopped, plus extra to serve
  • 4 small skinless boneless chicken breast fillets , cut into cubes
  • 2.0 tbsp clear honey

Instructions:

  1. Grind the garlic, ginger, orange zest and spring onions to a paste in a food processor. Add the honey, orange juice, soy sauce and oil, then blend again. Pour the mixture over the cubed chicken and leave to marinate for at least 1 hr, but preferably overnight. Toss in the mushrooms for the last half an hour so they take on some of the flavour, too.
  2. Thread the chicken, tomatoes, mushrooms and peppers onto 20 wooden skewers, then cook on a griddle pan for 7-8 mins each side or until the chicken is thoroughly cooked and golden brown. Turn the kebabs frequently and baste with the marinade from time to time until evenly cooked. Arrange on a platter, scatter with chopped spring onion and eat with your fingers.

Köşk Kebabý (Lamb Kebabs With Eggplant) Recipes

Ingredients:

  • ¾ lb. boneless leg of lamb, cut into ⅔” cubes
  • 1½ oz. lamb fat, preferably tail fat, cut into ⅔” cubes
  • ¼ cup olive oil
  • 1 tsp. coarse salt, plus more to taste
  • 5 slender, pale purple eggplants (about 1 ¼ lbs.)
  • ¼ cup butter
  • 1 large green pepper, cored, seeded, and finely chopped
  • 2 medium tomatoes, cored, peeled, and finely chopped
  • ⅓ cup lamb stock (see Panfried Lamb Kebabs with Bulgar Pilav, step 1)
  • ½ cup cilantro leaves

Instructions:

  1. Toss together lamb, fat, and oil in a shallow dish. Refrigerate for 24 hours. Drain, transfer to a bowl; discard oil. Add salt; toss to combine. Thread 1 piece fat between every 4–6 pieces lamb onto six 15″–20″ metal skewers; set aside.
  2. Preheat oven to 400°. Arrange eggplant on a baking sheet in a single layer. Roast until soft, about 30 minutes. Let cool slightly; remove and discard skin. Transfer flesh to a medium bowl; mash smooth with a fork.
  3. Melt butter in a large skillet over medium heat. Add peppers and cook until softened, 8–10 minutes. Add tomatoes and cook until most of the liquid has evaporated, 8–10 minutes. Add eggplant and salt to taste; stir to combine. Transfer to a serving platter. Preheat a grill to medium. Grill kebabs, turning and basting with stock occasionally, until golden brown, about 5 minutes. Slide meat and fat off onto eggplant mixture. Garnish with cilantro.

Lamb & Date Kebabs Recipes

Great for BBQs or when you’re short on time and looking for a quick dinner

Ingredients:

  • 10 g curry paste, (I used Pataks Tikka Massala paste)
  • 25 g red onion, diced
  • 40 g dry cous cous
  • cucumber raita to serve
  • 80 g red pepper, diced
  • 100 g lean diced lamb
  • 80 g courgette, diced
  • 80 g mushrooms, diced
  • 25 g dried dates
  • pinch each of ground corriander and ground cumin

Instructions:

  1. Heat the oven to 180C. Place vegetables in a roasting pan and place in the oven until soft, approx 15-20 minutes.
  2. Meanwhile, place the lamb, curry paste and spices in a food processor and blitz until minced and well blended. With your hands roll the mince into 2 sausage shapes and place in fridge for 10 minutes to chill.
  3. Remove the kebabs from the fridge and grill on a medium heat (approx 180C) with the dates for 3-4 minutes on either side.
  4. Meanwhile pour 50ml water over the couscous and stir. After 10 minutes mix in the roast vegetables. Serve with a dollop of cucumber raita and ENJOY!

Eggplant Wrapped Kebabs Baked In Tomato Sauce Recipes

Ingredients:

  • 4 x eggplants , sliced lengthwise to 1/8 inch
  • 4 x salt
  • 4 x olive oil
  • 2 x green peppers , sliced into 1 inch strips
  • 2 x tomatoes , sliced
  • 2 x kebab meat
  • 1 batch tomato sauce

Instructions:

  1. Salt the eggplant and let sit for 30 minutes.
  2. Rinse the salt from the eggplant and pat dry.
  3. Brush the eggplant with olive oil and broil in the oven until tender, about 3-5 minutes per side.
  4. Place some of the tomato sauce in the bottom of a baking dish.
  5. Place one slice of eggplant across another and place some of the kebab meat in the middle.
  6. Wrap both sides of the lower eggplant up and over followed by the sides of the outer slice of eggplant.
  7. Place the eggplant wrapped kebab parcels into the baking dish and top with more tomato sauce, slices of tomatoes and pepper.
  8. Bake in a preheated 375F/190C oven until the tomatoes and peppers are nice an roasted and the sides are bubbling, about 45-60 minutes.
  9. Mix everything, cover and let sit in the fridge while you prepare the eggplant.

Spiced Lamb Kebabs Recipes

Ingredients:

  • 1 1⁄2 lbs. ground lamb
  • 6 tbsp. grated onion
  • 2 tbsp. extra-virgin olive oil
  • 4 tbsp. dried ground aleppo pepper or paprika
  • 1 tbsp. kosher salt
  • 2 tsp. ground cumin
  • 2 tsp. dried oregano leaves
  • 2 tsp. dried mint leaves, crumbled with your fingers
  • 1 tsp. freshly ground black pepper

Instructions:

  1. Combine lamb and onion in a large bowl; set aside. Heat oil in a 10″ skillet over medium-high heat. Add aleppo pepper, salt, cumin, oregano, mint, and pepper and cook, stirring constantly, until fragrant, about 45 seconds. Pour the spice mixture over the reserved lamb mixture and mix thoroughly with your hands.
  2. Divide lamb mixture into 4 portions and roll each into a thin cylinder about 10″ long and 1″ thick. Slide a flat metal skewer (see page 100) into each cylinder and press the meat around the skewer. Transfer skewers to a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.
  3. Meanwhile, build a medium-hot fire in a charcoal grill or heat a gas grill to medium-high (alternatively, heat broiler and position rack 7″ from heating element). Grill or broil the kebabs, turning once, until browned and nicely charred on the outside and medium on the inside, about 4 minutes per side.
