Iced Coffee Shakerato Recipes

You can swap the condensed milk for regular milk, but the simple syrup is essential for the finished texture.

Ingredients:

  • 1 1/2 ounces espresso or 3 ounces very strong coffee, cooled slightly
  • 1 tablespoon sweetened condensed milk
  • 1 1/2 teaspoons simple syrup

Instructions:

  1. Combine espresso, sweetened condensed milk, and simple syrup in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold and mixture inside is very, very frothy, about 30 seconds.
  2. Using a cocktail strainer or slotted spoon to hold back ice while allowing foam and some small ice chips to pass through, pour into an ice-filled glass.

Coffee Malteds Recipes

These cookies bring back the memory of those malteds. Instead of syrup, I use freshly ground espresso beans (although instant espresso or coffee works) and unflavored malt powder — you can find it in supermarkets — which gives the cookies a warm, mildly vanilla taste. These are chewy and their look is humble. Don’t be tempted to bake them until set; they set outside the oven. Overbake these cookies, and they’ll still taste good, but you’ll lose their moist chewiness. These are so good with a swipe of dulce de leche.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup unflavored malted milk powder
  • 1/2 teaspoon baking powder
  • 8 tablespoons unsalted butter, cut into chunks, at room temperature
  • 1/2 cup sugar
  • 1/4 cup packed light brown sugar
  • 1 tablespoon ground coffee, preferably from espresso beans (or use instant or powdered coffee or espresso)
  • 1/2 teaspoon fine sea salt
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 1 teaspoon pure vanilla extract

Instructions:

  1. Position the racks to divide the oven into thirds and preheat it to 350°F. Line two baking sheets with parchment paper or silicone baking mats.
  2. Whisk the flour, malt powder, and baking powder together.
  3. Working with a stand mixer fitted with the paddle attachment, or in a bowl with a hand mixer, beat the butter, both sugars, espresso, and salt together on medium speed until well blended, about 3 minutes. Scrape down the bowl, return to medium speed and, one by one, beat in the egg, yolk, and vanilla, beating for 1 minute after each goes in. Turn off the mixer, add the dry ingredients all at once and pulse, just to begin incorporating the flour and malt powder. When the risk of flying flour is passed, mix on low speed only until the dry ingredients disappear into the dough. You'll have a rather crumbly dough, but that's fine. Give the dough a few last turns with a sturdy flexible spatula and then reach in, knead if necessary and gather the dough into a ball.
  4. Using a small cookie scoop, scoop out level portions of dough, or use a teaspoon to get rounded spoonfuls. Roll the dough into balls and place them an inch apart on the lined baking sheets.
  5. Bake the cookies for 14 minutes, rotating the baking sheets top to bottom and front to back after 8 minutes. The cookies will be soft and golden only around the edges; they won't look done, and they're not—they'll firm as they cool. Transfer the sheets to racks and then, after about 10 minutes, carefully lift the cookies onto the racks to cool completely.
  6. Packed in a tightly covered container, the cookies will keep for up to 3 days (after that, they get firmer and are perfect for dunking…in coffee, of course). Wrapped airtight, they can be frozen for up to 2 months.

Coffee Panna Cotta Recipes

You can use gelatin in place of the agar powder. Because either will make the dessert firmer the longer the panna cotta sits, reduce the amount if you are making dessert ahead of time.

Ingredients:

  • 2 cups soy milk
  • 4 tbsp. sugar
  • 1 tbsp. instant coffee powder
  • 2 tsp. agar powder
  • 2 tbsp. caramel sauce (optional)

Instructions:

  1. Heat soy milk to lukewarm temperature, add sugar and agar-agar powder in it. Let it stand for ten minutes.
  2. Add coffee powder in the cool panna cotta mixture and mix well.
  3. Pour the mixture in small ramekins, bowls or glasses and refrigerate to set for about 4-5 hours.
  4. If you want to invert the Panna Cotta and serve in a separate dish, grease the ramekins slightly with oil before setting it in refrigerator. Run a sharp knife around the edged and invert the ramekin on to a plate.
  5. To make caramel, heat 2 tbsp. suagr directly in a hot pan till it turns golden brown in colour. Pour a few drops of warm water to make it runny. Pour this caramel over the coffee Panna cotta on each individual serving bowl before serving.

Vietnamese Ice Coffee Recipes

Once you know how much condensed milk you like, pour it directly into the cup or glass before you brew the coffee.

Ingredients:

  • 2 tablespoons dark-roast ground coffee (preferably Trung Nguyen Premium Blend or Café Du Monde Coffee with Chicory)
  • 2 tablespoons (scant) sweetened condensed milk

  • A single-cup Vietnamese metal coffee filter set

Instructions:

  1. There are two ways to make Vietnamese coffee. The simplest method is to steep coffee grounds in a heatproof container with 2/3 cup boiling water for 4 minutes. Pour through a coffee filter into a heatproof glass.
  2. Or use a metal filter, which we recommend. Bring 1 cup water to a boil. Remove top screen from filter, add coffee, then screw on top screen. Place filter over a heatproof 12-ounce glass or measuring cup.
  3. Pour a splash of the hot water into filter; this will allow the coffee grounds to bloom. When coffee begins to drip through, add enough water to reach top of filter. Place lid on filter and let coffee drip for 4 minutes. If coffee stops dripping sooner, gently loosen screw to relieve pressure.
  4. Stir in condensed milk until blended. Add ice, stir, and serve.

A friend made me this coffee (based on a drink known as BULLETPROOF® Coffee) recently and the heavens opened up. I have no comment whatsoever on the health benefits (or lack thereof) of this coffee drink, as you can read all the different opinions online. All I can tell you is that you need to try it. Just once.

Ingredients:

  • 12 ounces, fluid Strong Coffee, Very Hot
  • 1 Tablespoon Coconut Oil, Unrefined
  • 1 Tablespoon Cold Butter (unsalted Is Recommended)

Instructions:

  1. Place all three ingredients in a blender and blend until emulsified, about 10-15 seconds (it will look like very creamy coffee). Pour into a coffee cup and enjoy immediately! (Warm it for 15 seconds in the microwave after blending if you'd like it to be very hot; blending cools it down slightly.)

Coffee Crème Brûlée Recipes

“On our honeymoon in Hawaii, my husband and I enjoyed dinner at Princeville Resort’s La Cascata restaurant on Kauai’s north shore,” writes Jamie Smietan of Rancho Santa Margarita, California. “I tried the crème brûlée which had a rich coffee flavor. A copy of the recipe would be the perfect souvenir.” Begin preparing this a day before you plan to serve it. The sugar is caramelized quickly under the broiler, but a small blowtorch (made for the kitchen) would work well, too.

Ingredients:

  • 4 cups whipping cream
  • 1 cup plus 8 teaspoons sugar
  • 2 tablespoons coarsely ground espresso coffee beans
  • 2 teaspoons instant espresso powder or coffee powder
  • 1 cinnamon stick
  • 1 vanilla bean, split lengthwise
  • 6 large egg yolks
  • 1 large egg

Instructions:

  1. Place eight 3/4-cup custard cups in large roasting pan. Combine cream, 1 cup sugar, ground espresso beans, instant espresso powder and cinnamon stick in heavy large saucepan. Using small sharp knife, scrape seeds from vanilla bean into mixture; add bean. Bring to boil, stirring until sugar and espresso powder dissolve. Remove from heat. Cover; let stand 30 minutes. Strain through fine sieve.
  2. Preheat oven to 325°F. Whisk egg yolks and egg in large bowl to blend. Gradually whisk in cream mixture. Divide among custard cups in pan. Pour enough hot water into roasting pan to come halfway up sides of custard cups. Bake custards until center moves only slightly when cups are gently shaken, about 55 minutes. Remove custards from pan. Cool; refrigerate uncovered overnight.
  3. Preheat broiler. Sprinkle 1 teaspoon sugar over each custard. Place custard cups on baking sheet. Broil until sugar is brown and caramelized, rotating baking sheet to broil evenly and watching closely to avoid burning, 1 to 2 minutes. Chill custards 1 hour. Serve.
