Red and Green Grape Granitas with Muscat and Frozen Sugared Grapes Recipes

A favorite test-kitchen Muscat wine is Bonny Doon’s Muscat Vin de Glacière from California.

Ingredients:

  • 2/3 cup water
  • 2/3 cup sugar
  • 1/4 cup fresh lemon juice
  • 3 cups green seedless grapes, stemmed (about 1 pound)
  • 3 cups red seedless grapes, stemmed (about 1 pound)
  • 6 small grape clusters (about 3 grapes per cluster)
  • 2 tablespoons plus 3/4 cup chilled Muscat wine
  • Additional sugar (for dipping)

Instructions:

  1. Combine 2/3 cup water and 2/3 cup sugar in small saucepan. Bring to boil, stirring until sugar dissolves. Boil 1 minute. Cool syrup. Stir in lemon juice.
  2. Puree green grapes and half of lemon syrup in blender (some bits of grape peel will remain). Transfer to 13x9x2-inch metal pan. Puree red grapes and remaining lemon syrup in blender. Transfer to another 13x9x2-inch metal pan. Freeze 1 hour. Stir with fork every hour until frozen, about 4 hours.
  3. Meanwhile, dip grape clusters into 2 tablespoons Muscat wine to moisten, then dip grapes into sugar to coat. Place grapes on small tray and freeze until frozen, about 4 hours. (Granitas and grapes can be made 1 day ahead. Cover separately and keep frozen.)
  4. Using fork, scrape granitas down length of pan, forming icy flakes. Pour 2 tablespoons Muscat wine into each of 6 wide glasses. Divide green grape granita equally among glasses. Spoon red grape granita alongside green grape granita in each glass. Garnish each with sugared grape cluster and serve.

Ingredients:

  • 1/3 cup peppered Boursin cheese (from a 5.2-oz package), softened
  • 1/4 cup finely chopped fresh basil
  • 18 very thin slices Genoa salami (3 1/2 inches in diameter; 1/4 lb)
  • 18 grape tomatoes
  • 18 long fresh chives

Instructions:

  1. Stir together cheese and basil until combined well. Put 1/2 teaspoon cheese in center of 1 salami round. Press 1 tomato, stemmed end down, into cheese (to stabilize it), then gather salami up around tomato. Turn wrapped tomato on its side and tie salami with a chive just below gathers (handle chive gently so it won't break), leaving top of tomato exposed. Make more “blossoms” in same manner, then trim chives.

Boozy Concord-Grape Ice Pops Recipes

If you want boozier pops, increase the gin to 1/3 cup. They will still freeze but not quite as hard, and they will get slushy quickly once unmolded.

Ingredients:

  • 1/4 cup juniper berries
  • 1/3 cup sugar
  • 2 cups chilled Concord grape juice
  • 1/4 cup gin
  • 2 tablespoons (or more) fresh lime juice
  • Ten 3-ounce ice-pop molds

Instructions:

  1. Toast juniper berries in a dry small skillet over medium heat, tossing often, until fragrant and skins are very glossy, about 1 minute. Let cool slightly, then crush with a mortar and pestle (or place in a resealable plastic bag and crush with a rolling pin). Transfer berries to a small saucepan. Add sugar and 1/4 cup water and bring to a simmer, stirring to dissolve sugar. Remove from heat and let sit 30 minutes. Strain juniper syrup through a fine-mesh sieve into a small bowl; discard solids. Place bowl in a bowl of ice water and let juniper syrup sit, stirring occasionally, until cold, about 30 minutes.
  2. Stir juniper syrup, grape juice, gin, and lime juice in a large measuring glass or a medium pitcher; taste and add more lime juice if needed. Divide mixture among ice-pop molds and freeze until liquid is beginning to crystallize, about 1 hour. Cover and insert sticks (waiting until liquid is slushy ensures straight sticks), then freeze ice pops until solid, at least 4 hours but preferably overnight. Dip molds briefly in hot water to release pops.
  3. Ice pops can be made 1 week ahead. Keep frozen.

Dolmades (Stuffed Grape Leaves) Recipes

Ingredients:

  • 1 16-oz. bottle of grape leaves, drained and unrolled
  • ¾ cup extra-virgin olive oil
  • 3 cloves garlic, minced
  • 2 scallions, minced
  • 1 large yellow onion, minced
  • ⅔ cup long-grain rice
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tbsp. minced fresh dill
  • ½ cup fresh lemon juice

Instructions:

  1. Bring a 5-qt. pot of water to a boil. Add grape leaves and cook, stirring gently, for 2 minutes. Drain leaves, stem them, and set them aside.
  2. Heat 1⁄2 cup oil in a 12″ skillet over medium-high heat. Add garlic, scallions, and onions and cook, stirring often, until soft, about 5 minutes. Add rice and cook, stirring often, until it begins to toast, about 3 minutes. Add 1 3⁄4 cups water, season with salt and pepper, and cook, stirring occasionally, until the rice has absorbed the water, about 15 minutes. Stir in dill, remove pan from heat, and let cool slightly.
  3. Cover the bottom of a 5-qt. pot with 3-4 grape leaves. Place remaining grape leaves on a work surface. Working with one grape leaf at a time, flatten leaf and place 2 tsp. rice mixture in the center. Fold the bottom side of the leaf over the rice mixture and then fold the right and left sides over the top. Roll package to create a tight cylinder and transfer stuffed grape leaf, seam side down, to the pot. Repeat with remaining grape leaves and rice mixture, fitting rolled packets snugly in the bottom of the saucepan. Whisk remaining oil, lemon juice, and 1 cup water in a medium bowl and add to the pot. Cover stuffed leaves with a small plate to keep them submerged; bring liquid to a boil. Reduce heat to medium-low and simmer until the rice filling is tender, 15-20 minutes. Remove plate and transfer stuffed leaves to a serving dish; pour some of the cooking liquid over the top and serve hot or at room temperature.

Concord Grape Soda Recipes

Ingredients:

  • 2¾ cups pure Concord grape juice
  • 2¾ cups filtered water
  • ¼ cup sugar (or ½ cup agave nectar)
  • â…› tsp. champagne yeast

Instructions:

  1. Bring grape juice, filtered water, sugar (or agave nectar) to a simmer in a 4-qt. saucepan over medium-low heat, and cook, stirring occasionally, until slightly reduced, about 30 minutes. Stir in yeast, and drape a large kitchen towel over saucepan; let sit for 24 hours.
  2. Using a funnel, pour soda into a sterilized 1-liter plastic soda bottle, filling to within 1″ of the top or lower. Close bottle tightly with top and let sit at room temperature (ideally 70°—75°) for 24 hours (the bottle should become rock-hard with the pressure that builds up within). Refrigerate soda for 2 days before opening and serving. Drink soda within 1 week of opening, and store in the refrigerator.

I have to admit that this idea came to me while watching my young son drop grape halves into a glass of water. Since that day I have been watching him closely for further inspiration.

Ingredients:

  • 1/2 pound seedless red or green grapes
  • 2 cups chilled still water

Instructions:

  1. 1. Cut the grapes in half and divide into two equal parts. Puree half of the grapes with 1/2 cup of the water in a blender until smooth, for about 30 seconds.
  2. 2. Pour the rest of the water into a pitcher. Strain the pureed grape mixture through a fine-mesh sieve into the pitcher, and stir well.
  3. 3. Place the remaining grape halves in the wells of standard ice cube trays. Fill the trays with the grape-water mixture and freeze.

Grape Jelly Recipes

This slightly tart, vibrant red jelly makes a lovely change from the usual jams

Ingredients:

  • 1.0kg red grapes , preferable with seeds (stripped from the stalks)
  • juice 1 lemon
  • 450.0g jam sugar (with added pectin)

Instructions:

  1. Tip the grapes into a large saucepan set over a low heat, then cover and leave to gently cook for 5 mins until the juices start to run. Take a potato masher or fork and mash up the grapes. Leave to cook for about 10 mins more, mashing every now and again until the grapes are falling apart. Place a clean tea towel or kitchen cloth in a sieve set over a bowl, then pour the grape mixture into this. Let the mixture drip through for at least 1 hr or preferably overnight.
  2. Measure out the juice (you should have about 600ml) and pour it into a pan along with the sugar and lemon juice. Set the pan over a high heat and bring to the boil. Skimming any scum as it boils, let the mixture bubble until the temperature reaches 105C on a sugar thermometer. If you don’t have one, put a small plate in the freezer for 5 mins, then pour a little of the juice onto the cold saucer. After 1 min, run your finger through; if the jam wrinkles slightly, it’s ready. Pour the hot jam into a sterilised jar. Will keep unopened for up to 3 months.

Grape Tart Recipes

To get the look we wanted for this tart, we used grapes in assorted colors and shapes and halved the larger ones. Taste grapes before making the pastry cream. Their flavor will determine how much sugar you use— if the grapes are tart, use 1/3 cup sugar; if sweet, use 1/4 cup.

Ingredients:

  • 3 large egg yolks
  • 1/4 to 1/3 cup sugar, depending on sweetness of grapes
  • 2 1/2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon vanilla
  • 1 1/2 tablespoons unsalted butter
  • 1 sheet frozen puff pastry (1/2 pound), thawed
  • 2 teaspoons sugar
  • 4 cups red and green grapes
  • 2 tablespoons red-currant jelly

Instructions:

  1. Whisk together yolks and 1/2 of sugar, then whisk in flour and a pinch salt. Stir together milk and remaining sugar in a heavy saucepan and bring just to a boil over moderate heat. Whisk 1/2 of hot milk into yolks to temper and whisk yolks into milk remaining in pan. Bring custard to a boil over moderate heat and boil, whisking constantly, until very thick. Remove from heat and stir in vanilla and butter until incorporated. Chill hot pastry cream in a bowl, its surface covered with a buttered round of wax paper, until cold, about 1 hour.
  2. Preheat oven to 425°F while pastry cream chills.
  3. Open puff pastry sheet on a lightly floured surface and roll out to a 14- by 12-inch rectangle. Quarter pastry to form 4 rectangles. Brush 1/3 inch of edges lightly with water and fold in borders. Brush off excess flour and press borders with back of a fork to seal. Brush borders lightly with water and sprinkle with sugar. Prick insides of shells all over with fork. Bake on a large baking sheet in middle of oven until crust is golden brown, 10 to 15 minutes, and transfer to a rack. Gently flatten puff pastry inside border to deflate, and cool completely.
  4. Halve and seed grapes if necessary. Melt jelly, stirring, and toss with grapes in a bowl.
  5. Spread pastry cream in shells with a spatula and top with grapes.

Stuffed Grape Leaves Recipes

Ingredients:

  • 1/2 cup extra-virgin olive oil
  • 3 medium yellow onions, peeled and minced
  • 1/2 cup long-grain rice
  • 1 large tomato, peeled, cored, and minced
  • 11/2 tsp. tomato paste with 2 tbsp. water
  • 4 sprigs dill, minced
  • Leaves from 2 sprigs parsley, minced
  • 1 tsp. sugar
  • 2 pinches ground allspice
  • Pinch cayenne
  • Salt
  • Juice of 1/2 lemon
  • 50 leaves from 1 16-oz. jar grape leaves, rinsed and blanched

Instructions:

  1. Heat 1⁄4 cup of the oil in a medium pot over medium heat, add onions, and cook until soft, about 10 minutes. Stir in rice, tomatoes, the remaining 1⁄4 cup oil, diluted tomato paste, dill, parsley, sugar, allspice, cayenne, and salt to taste. Cover pot, reduce heat to low, and simmer until rice is barely cooked through, about 15 minutes. Remove pot from heat and set aside, covered, for 10 minutes. Add lemon juice, adjust seasonings, and set aside to cool.
  2. Line bottom of a medium heavy-bottomed pot with a tight-fitting lid with 10 of the grape leaves and set aside. Lay 1 grape leaf, smooth side down, on a clean surface with stem facing you; pinch off stem. Put 1 heaping tbsp. rice filling into center of leaf. Fold sides over filling on either side by about 1″ to keep filling from falling out as you roll. Starting with end closest to you, roll leaf, encasing filling. Repeat process, making 30 stuffed leaves in all.
  3. Arrange 2-3 layers of stuffed leaves side by side, seam side down, in prepared pot, arranging each layer perpindicularto the previous layer. Cover stuffed leaves with the remaining 10 leaves. Add 1 cup water to potand weight stuffed leaves down with a small plate. Cover pot, bring to a boil over high heat to low, reduce heat to low, and simmer for 1 hour. Remove pot from heat and set aside to cool. Serve at room temperature or chilled.
