Spicy Grilled Shrimps Recipes

Grilled shrimps spiced with chili, garlic, lime and cilantro are a fantastic start on a successful BBQ evening. Simple and delicious!

Ingredients:

  • One lb un-shelled raw shrimps, small or medium
  • About ½ cup olive oil
  • Juice from ½ a lime
  • Fresh chili (what kind depends on how spicy you want the shrimps)
  • Two cloves of garlic
  • Plenty of cilantro
  • Sea salt (seasoning)

Instructions:

  1. Rinse the shrimps and let them dry.
  2. Mix together olive oil, lime juice and finely chopped cilantro, garlic & chili. Season with sea salt.
  3. Place all the shrimps on the grill on high temperature (but no flames). Turn the shrimps over to the other side when they have got some nice color (after about a minute). They are done when they are cooked through and have got a nice even pink color.
  4. Drop the shrimps directly from the grill into the olive oil mixture. Stir around and serve immediately together with bread and salad.

Ingredients:

  • 2 cups cooked chickpeas (or canned)
  • ½ cup tahini
  • ¼ cup olive oil
  • juice of 1 ½ lemons
  • 3 garlic cloves, finely minced or grated
  • 1 tablespoon ground cumin
  • ½ teaspoon cayenne pepper
  • ½ teaspoon smoked paprika
  • 1 tablespoon Tabasco
  • pepper
  • salt
  • 4 large collard leaves, deveined
  • 2 cups cooked rice
  • 4 small handfuls of sprouts
  • 4 small handfuls of tomatoes, diced
  • 1 english or 4 persian cucumbers, thinly sliced
  • ¾ cup spicy hummus

Instructions:

  1. To make the hummus, place all ingredients in a food processor and blend until smooth.
  2. To assemble the wraps, lay the collard leaves out flat on a cutting board, divide the rice between them, and spread over evenly. Next, layer on hummus, sliced cucumber, chopped tomato and sprouts. Roll up the collard leaf tightly and wrap in parchment, wax paper or cellophane. Secure with tape at the bottom and on the side, and peel back wrapper to eat.

Ingredients:

  • 16 melba toasts
  • 8 slices Taleggio
  • 8 slices spicy salami
  • 4 black olive, halved

Instructions:

  1. Preheat the grill to high and line a baking sheet with parchment. Put 8 melba toasts on the tray with a slice of Taleggio on each and grill until the cheese starts to melt.

Ingredients:

  • 1 (10 inch) tortilla
  • 1/4 cup monterey jack cheese, shredded
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup warm, cooked, shredded chicken
  • 2 tablespoons spicy peanut sauce
  • 1 green onion, sliced
  • 1 tablespoon cilantro, torn

Instructions:

  1. Place the tortilla in the pan, sprinkle half of the cheese over half of the tortilla, then top with the chicken, peanut sauce, green onion and cilantro and finally the remaining cheese.
  2. Fold the tortilla in half covering the filling and cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
  3. Serve garnished with more peanut sauce, chopped peanuts, green onions and cilantro.

Spicy Sausage Stuffed Mushrooms recipes Recipes

Ingredients:

  • 6 portobello mushrooms, caps, gills removed with a spoon
  • 1/2 pound Italian sausage, spicy, casings removed
  • 1/2 pound Italian sausage, sweet, casings removed
  • 2 tablespoons olive oil, plus more for cooking
  • 1/2 cup Parmesan cheese, shredded
  • 1/4 cup Italian- seasoned bread crumbs
  • 1 egg, lightly beaten
  • coarse salt
  • freshly ground pepper

Instructions:

  1. Preheat the oven to 400 degrees.
  2. In a large saute pan over medium-high heat add enough olive oil to coat the pan. Once it is hot add the sausage.
  3. Cook until it is browned, constantly breaking it up into smaller pieces with a wooden spoon or tongs as you cook it.
  4. Drain off the fat and transfer the cooked meat to a bowl and cool for 10 minutes. 
  5. Add the bread crumbs, half of the Parmesan cheese and egg to the cooked sausage mixture.
  6. Lightly brush the portobelllo's with olive oil and sprinkle with salt and pepper. Space them out evenly on a sheet pan. Top each with even amounts of the sausage stuffing.
  7. Bake for 15 to 20  minutes or until the mushrooms are soft.
  8. Remove from the oven and sprinkle the remaining Parmesan on top. Place the tray back under the broiler for 2 to 3 minutes until the cheese is golden brown and bubbly.

Spicy Guacamole Recipes

Enjoy this awesome guacamole recipe, made with ripe California avocados, courtesy of Deena Wachtel.

Ingredients:

  • 1 ripe california avocado
  • ½ red onion, cut itno large chuncks
  • 2 ripe tomatoes, halved, seeds removed
  • ½ jalapeno (can adjust for spicy-ness)
  • 1 lime – zest and juice
  • ½ bunch cilantro
  • Salt/pepper to taste

Instructions:

  1. In a large bowl cream the avocado into a smooth paste. Set aside.
  2. In the bowl of a Cuisenart, pulse onion, tomato, jalapeno and lime zest / lime juice until small pieces and almost a puree.
  3. Transfer tomato mixture to creamed avocado and mix well.
  4. Taste for seasoning.
  5. Let sit for 30 minutes before serving.
  6. Enjoy!

‘Pad Thai’ fried noodles and shrimp is a spicy peanut sauce.

Ingredients:

  • 6 ounces rice noodles
  • 1 tablespoon peanut oil
  • 6 ounces shrimp, chicken or tofu
  • 2 shallots, finely diced
  • 2 cloves garlic, chopped
  • 1/2 cup spicy peanut sauce
  • 1 egg, lightly beaten
  • 2 tablespoons roasted peanuts, chopped
  • 1 cup bean sprouts
  • 2 green onions, sliced
  • 1/4 cup cilantro, chopped
  • 1 lime lime cut into wedges

Instructions:

  1. Cook the noodles in water as directed on package until just pliable.
  2. Heat oil in a pan over medium-high heat.
  3. Add the shrimp, shallots and garlic and saute for 1 minute.
  4. Add the peanut sauce and noodles, mix and move to the side of the pan.
  5. Add the egg, let it set a bit and then mix it into the noodles.
  6. Add the peanuts and bean sprouts and cook for a minute.
  7. Add the green onions and cilantro and remove from heat.

Spicy Chicken & Bean Wrap Recipes

Use up leftover cooked chicken in this Mexican-style wrap, for an easy, tasty lunch

Ingredients:

  • 4 slices pickled jalapeño pepper (or a good splash Tabasco)
  • handful leftover chicken , shredded
  • 4 tbsp drained black beans or kidney beans
  • 1 large flour tortilla wrap (look for Mission Deli wraps)
  • 3 cherry tomatoes , halved
  • 2 tbsp spicy salsa from a jar
  • handful rocket or spinach leaves

Instructions:

  1. Warm the tortilla in the microwave for 10 secs; this will soften it and makes it easier to roll. Place the chicken and beans along the middle. Season, then spoon over the salsa and scatter with peppers or Tabasco. Lay the tomatoes and leaves on top. Bring the bottom of the tortilla up over the filling. Fold the sides in, then roll into a tight wrap. Pack up tightly to keep it together.

Spicy Sausage Stuffed Mushrooms Recipe Recipes

Ingredients:

  • 6 portobello mushrooms, caps, gills removed with a spoon
  • 1/2 pound Italian sausage, spicy, casings removed
  • 1/2 pound Italian sausage, sweet, casings removed
  • 2 tablespoons olive oil, plus more for cooking
  • 1/2 cup Parmesan cheese, shredded
  • 1/4 cup Italian- seasoned bread crumbs
  • 1 egg, lightly beaten
  • coarse salt and freshly ground pepper, for seasoning

Instructions:

  1. Preheat the oven to 400 degrees.
  2. In a large saute pan over medium-high heat add enough olive oil to coat the pan. Once it is hot add the sausage.
  3. Cook until it is browned, constantly breaking it up into smaller pieces with a wooden spoon or tongs as you cook it.
  4. Drain off the fat and transfer the cooked meat to a bowl and cool for 10 minutes. 
  5. Add the bread crumbs, half of the Parmesan cheese and egg to the cooked sausage mixture.
  6. Lightly brush the portobelllo's with olive oil and sprinkle with salt and pepper. Space them out evenly on a sheet pan. Top each with even amounts of the sausage stuffing.
  7. Bake for 15 to 20  minutes or until the mushrooms are soft.
  8. Remove from the oven and sprinkle the remaining Parmesan on top. Place the tray back under the broiler for 2 to 3 minutes until the cheese is golden brown and bubbly.

Spicy Feel-Good Chicken Soup Recipes

The squash and cabbage greens are seasonal and healthy, but you can add whatever veggies you like.

Ingredients:

  • Spicy Chicken Stock
  • 1 (2-pound) kabocha squash
  • 4 cups thin wedges mixed cabbages (such as bok choy, Napa, and savoy)
  • 4 cups cooked chicken (see Spicy Chicken Stock)
  • Kosher salt, freshly ground pepper
  • 1 jalapeño, thinly sliced
  • Basil leaves, cilantro leaves with tender stems, and chili oil (for serving)
  • 1 (2-inch) piece ginger, peeled, finely grated
  • 3 limes, cut into wedges

Instructions:

  1. Heat stock in a large pot over medium.
  2. Meanwhile, cut squash into 4 wedges and remove seeds. Cut each wedge into 4 pieces. Add squash to stock and simmer until tender, 8–10 minutes. Add cabbage and cooked chicken and cook until warmed through, about 4 minutes. Season with salt and pepper.
  3. Divide soup among bowls. Top with jalapeño and some basil and cilantro; drizzle with chili oil and finish with a pinch of ginger. Serve with lime wedges for squeezing over.
  4. Soup (without toppings) can be made 3 days ahead. Let cool; cover and chill.

Ingredients:

  • 8 ounces spicy sopressata, casings removed
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon chili flakes
  • 2 cups basic tomato sauce
  • 1 pound rigatoni
  • 1/4 cup finely grated pecorino romano, plus more for serving

Instructions:

  1. Cut the sopressata into batons about 2 inches long and 1/4-inch thick.
  2. In a very large skillet (or a Dutch oven), warm the olive oil over medium-high heat. Add the sopressata and cook, stirring occasionally, until it has crisped and rendered some of its fat. Add the chili flakes and cook for 30 seconds, then add the tomato sauce and cook over high heat until most of the liquid has evaporated, about 8 minutes. Remove from the heat.
  3. In a large pot of well-salted boiling water, cook the pasta according to the package instructions until 2 minutes shy of al dente; drain.
  4. Toss the rigatoni into the skillet with the sopressata and tomato mixture and cook over medium heat, stirring occasionally, until the pasta is al dente and the sauce has reduced and clings to the pasta, 2 to 3 minutes. Add the Pecorino Romano, then add a few tablespoons of water if the sauce seems dry.
  5. Divide the pasta among four individual serving plates or bowls and finish each with a sprinkling of Pecorino and a drizzle of olive oil.
