Grilled Spareribs with Cherry Cola Glaze Recipes

Before using the cherry cola, pour it into a bowl and allow it to stand at room temperature until no longer effervescent, about four hours. Start with a relish platter, then serve the spareribs with the State Fair Potato Salad and corn on the cob. What to drink: Tall glasses of iced tea or frosty mugs of lager.

Ingredients:

  • 4 12-ounce cans cherry cola (flat)
  • 2 cups cherry jam or preserves
  • 2/3 cup Dijon mustard with horseradish
  • 3 tablespoons soy sauce
  • 2 tablespoons malt vinegar or apple cider vinegar
  • 1 tablespoon hot pepper sauce
  • 7 1/4 to 7 1/2 pounds well-trimmed pork spareribs

Instructions:

  1. Boil cherry cola in heavy large saucepan over medium-high heat until reduced to 1 1/2 cups, about 45 minutes. Stir in next 5 ingredients. Reduce heat to medium and simmer until mixture is reduced to 2 1/2 cups, stirring occasionally, about 35 minutes. Transfer glaze to large bowl. (Can be made 1 week ahead. Cover; chill. Bring to room temperature before using.)
  2. Position racks in top and bottom thirds of oven and preheat to 325°F. Sprinkle ribs with salt and pepper. Wrap each rib rack tightly in foil, enclosing completely. Divide foil packets between 2 rimmed baking sheets. Bake until ribs are very tender, switching positions of baking sheets halfway through baking, about 2 hours total. Cool ribs slightly in foil. Pour off any fat from foil packets. (Can be prepared 1 day ahead. Keep covered in foil packets and refrigerate. Let stand at room temperature 1 hour before continuing.)
  3. Prepare barbecue (medium-low heat). Cut each rib rack between bones into individual ribs. Set aside 1 cup glaze. Add ribs to bowl with remaining glaze and toss to coat. Grill ribs until brown and glazed, turning to prevent burning, about 5 minutes total. Serve, passing reserved glaze separately.

For centuries, people have been using hot toddies as a natural remedy for common ailments. Adding warming spices like fiery black pepper, revitalizing cinnamon, and cleansing cardamom make for a cheering drink that can also cure the winter blues.

Ingredients:

  • 2 teaspoons cardamom pods, crushed (about 20 pods)
  • 2 teaspoons whole coriander seeds
  • 1/4 teaspoon whole black peppercorns
  • 11 (3″) cinnamon sticks, divided
  • 1 (2″) piece ginger, unpeeled, thinly sliced
  • 2 medium oranges
  • 6 tablespoons honey
  • 3 tablespoons whole leaf black tea or 3 bags black tea
  • 9 ounces dark rum

Instructions:

  1. Toast cardamom, coriander, peppercorns, and 5 cinnamon sticks in a large pot over medium-high heat until fragrant, about 1 minute. Add ginger and 8 cups water.
  2. Using a peeler, peel orange zest into long strips about 3″ each. Reserve 6 pieces for garnish, then add remaining zest to pot.
  3. Bring to a boil, then reduce heat, cover, and simmer 15 minutes. Remove from heat and stir in honey and tea. Let steep 5 minutes.
  4. Strain through a fine-mesh sieve into a large bowl or pot. Divide among mugs and top off with rum. Garnish with reserved orange peels and cinnamon sticks.
  5. Tea mixture, without rum, can be made 1 week ahead; cover and chill.

Almond Horchata Recipes

Horchata is a refreshing iced drink served in Mexico. It is made with almonds, raw rice, or melon seeds.

Ingredients:

  • 1 cup blanched whole almonds
  • 2 cups boiling-hot water
  • 1/2- to 1-inch piece cinnamon stick
  • 1/3 cup sugar, or to taste
  • Freshly grated zest of 1 lime
  • 2 cups ice plus additional for glasses
  • Garnish if desired: cinnamon sticks and lime zest

Instructions:

  1. In a blender combine all horchata ingredients except ice and let stand in blender 5 minutes. Blend mixture on low speed and gradually work up to high speed (use caution when blending hot liquids). Blend mixture on high speed 3 minutes. Add 2 cups ice and blend until melted.
  2. Pour mixture through a large sieve lined with a double layer of dampened cheesecloth into a bowl, stirring, and discard solids.
  3. Fill 4 tall glasses with additional ice and horchata and garnish with cinnamon sticks and lime zest. Flavor of horchata improves if made 1 day ahead and chilled, covered.

Ingredients:

  • 6 tablespoons honey
  • 8 ounces bourbon, rye whiskey, or dark rum
  • 24 ounces boiling water
  • 4 lemon slices

Instructions:

  1. Pour 1 1/2 tablespoons honey in each of 4 warmed cups. Add bourbon, rye, or rum and then water. Stir until honey is completely dissolved. Garnish each cup with a lemon slice and serve.

    Substitute infused gin for the bourbon.

Ingredients:

  • 1½ tsp ground cinnamon

Brandied Hot Chocolate Recipes

The thickness and bitterness of your drink will depend on your chocolate’s level of cacao, which varies among brands. We got great results with Ghirardelli, which produced a full-bodied cocoa (our preference for dunking the ginger doughnuts). We also used Lindt to good effect, but needed to add more cornstarch for extra thickening. Chocolate with more than 60 percent cacao will be too bitter.

Ingredients:

  • 2 teaspoons cornstarch
  • 1 1/2 cups whole milk
  • 1/2 cup water
  • 10 oz fine-quality bittersweet chocolate (not unsweetened), finely chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsweetened cocoa powder (optional)
  • 2 tablespoons brandy (optional), or to taste

Instructions:

  1. Whisk together cornstarch and 2 tablespoons milk.
  2. Bring water to a boil in a 2-quart heavy saucepan, then reduce heat to moderately low and add chopped chocolate and a pinch of salt, whisking until smooth.
  3. Add cream and remaining milk (1 1/4 cups plus 2 tablespoons) and increase heat to moderate, then cook, whisking occasionally, until mixture is smooth and heated through. Taste; for a deeper chocolate flavor, whisk in cocoa.
  4. Whisk cornstarch mixture, then add half to chocolate mixture and simmer, whisking, until slightly thickened, about 2 minutes. Add brandy (if using) and remaining cornstarch mixture to thicken if desired, then simmer, whisking, 1 minute.

Cinnamon White Hot Chocolate Recipes

Cinnamon lends warming complexity to this comforting, creamy cold-weather drink. For a little pick-me-up, a splash of rum certainly wouldn’t hurt.

Ingredients:

  • 4 (3″) cinnamon sticks
  • 1/8 teaspoon kosher salt
  • 2 1/2 cups whole milk, divided
  • 2 teaspoons cornstarch
  • 2 ounces white chocolate chips (about 1/3 cup) or white chocolate, chopped
  • 1/2 teaspoon vanilla extract
  • Unsweetened whipped cream and ground cinnamon (for serving)

Instructions:

  1. Toast cinnamon sticks in a medium dry saucepan over medium heat until fragrant, about 1 minute. Add salt and 2 cups milk and bring to a simmer. Remove from heat and let steep 10 minutes.
  2. Whisk cornstarch and remaining 1/2 cup milk in a small bowl. Add to warm milk mixture and heat over medium. Bring to a simmer and cook, stirring constantly, until warmed through, about 1 minute. Remove from heat and add chocolate and vanilla. Let sit until chocolate is melted, about 30 seconds, then stir to combine. Discard cinnamon sticks.
  3. Divide hot chocolate between mugs. Top with whipped cream and dust with ground cinnamon.
