Fried Sweet Potatoes Recipes

Ingredients:

  • 3 lbs. lard
  • 4 sweet potatoes
  • 4–6 tbsp. sugar
  • Salt

Instructions:

  1. Heat lard in a wide, medium heavy-bottomed pot over medium-high heat until temperature reaches 350° on a candy thermometer. Meanwhile, peel sweet potatoes, then cut each crosswise into ¼”-thick slices.
  2. Working in batches, deep-fry sweet potatoes, stirring occasionally with a slotted metal spoon, until golden and crisp, 4–5 minutes per batch.
  3. Transfer sweet potatoes with a slotted spoon to paper towels to drain. Sprinkle sugar and salt to taste over sweet potatoes while still hot. Serve immediately.

Sweet Potato Fries Recipes

Ingredients:

  • 3 lbs. sweet potatoes or yams
  • Vegetable oil
  • Salt
  • Freshly ground black pepper (optional)

Instructions:

  1. Preheat the oven to its lowest setting. Set a deep, heavy-bottomed Dutch oven fitted with a deep fry thermometer over medium-high heat, add oil to a depth of 2 inches, and set over medium-high heat to preheat. Line a large baking sheet with a wire rack and set it by the stove.
  2. In a large bowl, whisk together the corn starch and 1 cup ice water. Add the sweet potatoes to the batter, tossing well to coat. (The batter should be quite loose and runny. Thin with a tablespoon or two more of water needed).
  3. When the oil reaches 325°F, fry the sweet potatoes in batches: with your fingers spread far apart, lift the fries from the bowl, allowing most of the batter to drip away before transferring them to the oil to cook just until softened, 2–3 minutes. Use a spider strainer or slotted metal spoon to transfer the fries to the baking sheet while you continue blanch frying the rest of the potatoes in this manner.
  4. Once all of the fries have been blanched, allow the oil to return to 350°F. Refry the potatoes in batches, stirring frequently and allowing them to crisp and brown, about 2 minutes more. Return the crisped fries to the baking sheet as they come out of the oil and hold in the warm oven while you continue cooking the rest of the fries. Season with salt and pepper and serve hot.

Ingredients:

  • 4 whole medium sweet potatoes
  • 1 cup sugar
  • 1 cup milk
  • 2 whole eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 cup brown sugar
  • 1 cup pecans
  • ½ cups flour
  • ¾ sticks butter

Instructions:

  1. Wash 4 medium sweet potatoes and bake them in a 375-degree oven until fork tender, about 30-35 minutes. When they are finished cooking slice them open and scrape out the flesh into a large bowl.
  2. Add 1 cup of (regular grandulated) sugar, 1 cup of milk, 2 eggs, 1 teaspoon of vanilla extract and 1 teaspoon of salt. With a potato masher, mash them up just enough—you don’t want to be perfectly smooth.
  3. Now, in a separate bowl, add 1 cup brown sugar, 1 cup pecans, chopped (that means measure a cup of pecans, then chop them), ½ cup flour, and ¾ stick of butter. With a pastry cutter or fork, mash together until thoroughly combined.
  4. Spread the sweet potato mixture into a regular baking dish and sprinkle the crumb mixture all over the top.
  5. Bake in a 400-degree oven for 30 minutes, or until golden brown.

  • 1/2 cup raisins
  • 1/3 cup sweet sherry
  • 3 medium sweet potatoes
  • 2/3 cup brown sugar
  • 4 tbsp. butter, melted
  • 1/2 cup fresh orange juice
  • 1 tsp. finely chopped orange zest
  • 1 tsp. pumpkin spice (or 2/3 tsp. ground cinnamon,
  • 1/4 tsp. ground ginger, pinch ground nutmeg,
  • and pinch ground allspice)
  • 1/2 cup coarsely chopped pecans

Instructions:

  1. Preheat oven to 375°. Soak raisins in sherry until soft, about 30 minutes. Drain raisins and transfer to a large bowl.
  2. Meanwhile, place sweet potatoes in a roasting pan and bake until tender, about 40 minutes. Allow potatoes to cool, then peel, puree (it is best to do this in a food mill), and add to raisins. Add brown sugar, butter, orange juice, orange zest, and pumpkin spice and mix well. Fold in pecans and pineapple and transfer to an 8'' square baking dish.
  3. Bake casserole for 20 minutes, then cover with marshmallows and bake until marshmallows are golden, about 5 minutes more. Serve warm.

Ingredients:

  • 8 medium sweet potatoes
  • 2 pinches of salt
  • 7 tbsp. butter
  • 1⁄2 cup half and half
  • 1⁄4 cup dry sherry
  • 3 tbsp. brown sugar

Instructions:

  1. Preheat oven to 350°. Put 8 medium sweet potatoes into a large pot, cover with cold water, and add 2 generous pinches of salt. Bring to a boil over high heat, reduce heat to medium, and cook until soft when pierce, 30-40 minutes. Drain and set aside to cool.
  2. Peel potatoes and transfer to a large bowl. Coarsely mash potatoes with the tines of a fork, then add 5 tbsp. softened butter, 1⁄2 cup half-and-half, 1⁄4 cup dry sherry, and 3 tbsp. brown sugar. Beat with an electric mixer on medium speed until light and fluffy, about 2 minutes.
  3. Transfer sweet potato mixture to a buttered medium baking dish, dot with 2 tbsp. butter, and bake until top is golden brown, about 30 minutes.
