Hot Bloody Mary soup Recipes

Adapt a creamy tomato soup recipe by adding all the spicy ingredients of a peppery Bloody Mary cocktail

Ingredients:

  • ½ x quantity creamy tomato soup (see 'Goes well with', below to make your own)
  • 2 tbsp celery salt
  • 2 tbsp celery seeds
  • 2 tbsp mixed peppercorn
  • 1 tbsp Sichuan peppercorn
  • bottle Worcestershire sauce
  • small bottle Tabasco sauce
  • small bottle vodka
  • 1 large lemon, cut into small wedges

Instructions:

  1. Reheat the tomato soup. Mix the celery salt and seeds in a small jar. Crush all the peppercorns together using a pestle and mortar. Assemble a tray of all the ingredients to garnish, with the celery mix, crushed pepper mix, Worcestershire sauce, Tabasco, vodka and lemon wedges.
  2. Ladle the soup into bowls and let everyone spice it up to their liking.

Tomato Soup With Cheese & Marmite Twists Recipes

A comforting childhood favourite – make up a batch and keep in the freezer for a quick supper

Ingredients:

  • Ingredients FOR THE CHEESE AND MARMITE TWISTS
  • 8 large tomatoes
  • 300.0ml double cream
  • 2.0 tbsp olive oil
  • 1 ready-to-use sheet puff pastry
  • 1 large onion
  • 400.0ml vegetable stock
  • 2.0 tsp Marmite (if you don't like Marmite use a little mustard instead)
  • ½ tsp dried oregano
  • FOR THE SOUP
  • 50.0g Red Leicester or cheddar
  • 4.0 tbsp tomato ketchup

Instructions:

  1. Heat oven to 200C/180C fan/ gas 6. Finely grate the cheese. Unravel the pastry, spread evenly with the Marmite, then sprinkle the cheese on top. Now fold the pastry in half to make a sandwich and press down well.
  2. Cut the pastry into 12 equal strips. Carefully twist each strip and place on a lightly greased baking sheet. Bake for 15 mins until golden. Leave for 5 mins to firm up a little, then lift onto a cooling rack with a fish slice.
  3. Halve the onion, then peel and chop it. Fry in the oil for about 5 mins, stirring with a wooden spoon until soft but not coloured, as this will spoil the colour of the soup later.
  4. Chop the tomatoes, then add to the pan with the stock, ketchup and oregano. Season. Bring to the boil, then turn down the heat. Cover the pan, then simmer for 15 mins until the veg are soft.
  5. Tip the cream into the soup, then gently heat, stirring with the wooden spoon until it just starts to bubble. Don’t boil vigorously as the cream could curdle. Ladle into bowls and serve with the Cheese & Marmite straws.

Matzo Ball Soup Recipes

This is an approximation of the matzo ball recipe my mother always uses. It is based on the one on the Manischewitz matzo meal box, but with a few important modifications to account for my mother’s heavy hand with the schmaltz and her inexact measuring technique. Whatever you do, don’t work too hard to shape them into balls—rolling the matzo balls around for too long in the palm of your hand toughens them up. Instead, coax them into a spherical shape, and don’t be too anal about it. Also, be sure to have the chicken soup simmering when the matzo balls are ready, so you can put them straight into the hot soup.

Ingredients:

  • 1/2 large chicken (about 2 1/2 pounds), cut into pieces or a combination of necks, backs, wings, and other chicken parts to equal 4 pounds
  • 4 stalks celery, tops included, roughly chopped
  • 3 to 4 carrots, roughly chopped
  • 2 yellow onions, roughly chopped
  • 1 small parsnip, roughly chopped
  • 1 small turnip, peeled and chopped
  • 1 tablespoon Kosher salt
  • 1 teaspoon whole black peppercorns
  • 1 point of a star anise
  • 4 sprigs fresh dill
  • 5 large eggs
  • 4 tablespoons hot chicken soup or water
  • 3 tablespoons chicken fat (schmaltz), skimmed from the soup
  • 1 teaspoon Kosher salt plus more for cooking water
  • 1 cup plus 2 tablespoons matzo meal

Instructions:

  1. Place all of the ingredients except the dill in an 8-quart stock pot and add about 3 quarts of cold water to cover. Set over high heat and bring to a boil, skimming any froth that rises to the surface. Turn the heat down to low, set the cover ajar, and simmer for about 2 hours.
  2. Add the dill and continue simmering an additional 45 minutes. Turn off the heat, cool to room temperature, and strain through a fine sieve. Refrigerate. If you can prepare the soup a day or two in advance, it will taste even better. Skim off any fat that coagulates on the surface and reserve the fat for the matzo balls.
  3. A few hours before serving, prepare the matzo balls. In a large pot, bring the strained soup to a simmer. In a large bowl, beat together the eggs, soup (or water), chicken fat, and salt. Beat in the matzo meal and refrigerate, uncovered, for 1 hour.
  4. Bring about 5 quarts of water to a boil with 1 1/2 tablespoons Kosher salt dissolved in it. Remove the matzo meal mixture from the fridge. Wet your hands with cold water and gently shape about 2 tablespoons of the mixture into a sphere by rolling it around in the palms of your hands. Try not to compact the ball too much. Note that the matzo balls will swell to more than double their size when cooked.
  5. Add the rolled matzo balls to the boiling salted water and repeat with the remaining mixture. Bring the water back to a boil. Once boiling, turn the heat down to a simmer, tightly cover the pot, and cook for about 40 minutes until the matzo balls are floating on the surface, puffed, and snowy white. Using a slotted spoon, transfer the matzo balls to the hot soup. Keep warm until you are ready to serve.

Mary Cadogan’s aromatic broth will warm you up on a winter’s evening – it contains ginger, which is particularly good for colds, too

Ingredients:

  • 1 tsp chopped fresh root ginger
  • mint or basil leaves and a little shredded chilli (optional), to serve
  • 2 spring onions , shredded
  • 2 tsp soy sauce , plus extra for serving
  • 2-3 mushrooms , thinly sliced
  • 900.0ml chicken or vegetable stock (or Miso soup mix)
  • 50.0g rice or wheat noodles
  • 2 tbsp sweetcorn , canned or frozen
  • 1 boneless, skinless chicken breast, about 175g/6oz
  • 1 garlic clove , finely chopped

Instructions:

  1. Pour 900ml chicken or vegetable stock into a pan and add 1 boneless, skinless chicken breast, 1 tsp chopped root ginger and 1 finely chopped garlic clove.
  2. Bring to the boil, then reduce the heat, partly cover and simmer for 20 mins, until the chicken is tender.
  3. Remove the chicken to a board and shred into bite-size pieces using a couple of forks.
  4. Return the chicken to the stock with 50g rice or wheat noodles, 2 tbsp sweetcorn, 2-3  thinly sliced mushrooms, 1 shredded spring onion and 2 tsp soy sauce.
  5. Simmer for 3-4 mins until the noodles are tender.
  6. Ladle into two bowls and scatter over the remaining shredded spring onion, mint or basil leaves and shredded chilli if using. Serve with extra soy sauce for sprinkling.

Ingredients:

  • FOR THE ICE CUBES:
  • 3 tbsp. fresh dill, finely minced
  • 1 tbsp. lemon juice
  • ⅛ tsp. salt
  • FOR THE SOUP:
  • 1 lb. beets, cooked, chilled, and peeled
  • 1 ¼ cup plain yogurt
  • ¼ cup fresh dill
  • 4 tbsp. lemon juice
  • ½ tsp. salt

Instructions:

  1. Make the ice cubes: Divide the dill, lemon juice, and salt among 4 cubes of an ice cube tray. Top off with cold water and freeze until solid.
  2. Make the soup: In a blender, combine beets, yogurt, dill, lemon juice, and salt. Blend on high speed until completely smooth. Adjust seasonings if necessary. Portion soup into individual bowls and top each with a lemon-dill ice cube.
