Herbed Jasmine Rice Recipes

Here we’ve cooked the rice like pasta—a method that can be applied to any long-grain rice (preferably not converted). As for the fresh herbs, we used lemon thyme and chives, but take advantage of whatever you have on hand.

Ingredients:

  • 3/4 cup jasmine rice
  • 1 tablespoon unsalted butter
  • 1/4 cup chopped mixed fresh herbs

Instructions:

  1. Cook rice in a 3-qt. saucepan of boiling salted water, stirring occasionally, until tender, 10 to 15 minutes, and drain. Toss rice with butter and herbs and season with salt and pepper.

Instructions:

  1. Rinse 2 cups shortgrain white rice in a sieve set in a bowl, changing water as needed, until water is just slightly milky. Bring rice and 2 cups water to a boil in a medium saucepan. Chicken Rice Recipes

Ingredients:

  • 1 tsp oil
  • 2 cloves garlic , peeled and smashed
  • 4 slices ginger
  • 1 cup long grained rice
  • 2 cups broth from cooking chicken

Instructions:

  1. Stuff the garlic and ginger into the chicken.
  2. Place the chicken into a large pot and cover with water.
  3. Bring to a boil, reduce the heat and simmer for 20 minutes.
  4. Plunge the chicken into ice water until no longer hot, about 15 minutes. (Retain the water that the chicken was cooked in.)
  5. Mix the sesame oil, soy sauce, sugar and garlic and brush onto the chicken.
  6. Cut the chicken into pieces.
  7. Heat the oil in a pan.
  8. Add the garlic and ginger and saute until fragrant.
  9. Add the rice and broth and bring to a boil.
  10. Reduce the heat, cover and simmer until the rice is tender, about 20 minutes.
  11. Simmer the bones in the broth for an hour.
  12. Strain the solids from the broth.
  13. Serve with lettuce.
  14. Puree everything in a food processor.
  15. Puree the ginger and season with sesame oil and salt.

Persian Rice Recipes

The browned, crusty layer of rice that forms at the bottom of the pan is considered the most treasured part of this Middle Eastern classic.

Ingredients:

  • 2 cups basmati rice
  • 3 teaspoons kosher salt, divided
  • Pinch of saffron threads
  • 2 cups plain whole-milk yogurt
  • 3 tablespoons unsalted butter

Instructions:

  1. Place rice in a medium saucepan; add 2 teaspoons salt and cold water to cover by 2″. Bring to a boil over medium heat; reduce heat to low and simmer for 5 minutes. Drain rice, reserving 3/4 cup cooking liquid.
  2. Place saffron and 1/2 cup reserved cooking liquid in a small bowl; let saffron soften for 5 minutes. Place yogurt in a medium bowl and stir in remaining 1 teaspoon salt and saffron water. Add rice and stir to coat.
  3. Melt butter in a large deep nonstick skillet over medium heat; swirl to coat bottom and sides of pan. Add rice, mounding slightly in center. Poke 6-7 holes in rice with the end of a wooden spoon. Cover with foil, then a lid. Cook, rotating skillet over burner for even cooking, for 10 minutes (do not stir). Reduce heat to low; cook, adding more reserved cooking liquid by tablespoonfuls if rice has not finished cooking when water evaporates, until a golden brown crust forms on bottom of rice, 20-25 minutes.
  4. Remove lid and foil; invert a plate over skillet. Using oven mitts, carefully invert rice onto plate; use a heatproof spatula to remove any crust remaining in skillet.

Rice Noodles Recipes

Dried rice noodles are readily available, but homemade fresh noodles are a fun project. If you’ve ever made the light pastry dough known as pâte à choux (the base for gougères and profiteroles), the first step to making the noodle dough will be familiar. The flour and water are mixed together, then cooked on the stove top until thick (this step also cooks out the raw-flour taste). This is a two-person operation: once the paste thickens, one person will need to hold the pot down while the other stirs continuously. You will need a potato ricer for extruding the spaghetti-like noodles. The flavor of these noodles improves if you let the initial rice flour-water mixture ferment at room temperature for four days. While not essential to the success of the recipes, it does lend a nice tanginess to the finished noodles. However, if you are in a rush, you can let it soak overnight. The noodles can be used in Bún Bò Hue or as the base for noodle bowls.

Ingredients:

  • 4 cups rice flour, plus more for dusting
  • 3 1/2 cups water
  • 3 tablespoons shallot oil or canola oil
  • 1 cup tapioca starch

Instructions:

  1. 1. In a bowl, whisk together the rice flour and 3 1/2 cups water until smooth. Cover and allow to ferment at room temperature for 4 days.
  2. 2. Carefully pour out 1 1/2 cups water from the settled rice flour. Add 1/4 cup fresh water to the batter and stir until smooth.
  3. 3. Bring a large stockpot of salted water to a boil over high heat. Keep the water hot while you prepare the dough.
  4. 4. In a heavy-bottomed 4- to 6-quart pot, heat the oil over high heat. When the oil is hot, add the batter and turn down the heat to low. This is a two-person job: one person needs to stabilize the pot while the other one quickly and firmly stirs the batter with a wooden spoon. The dough will begin to thicken. Continue cooking, stirring continuously, for 5 to 8 minutes, until the dough is a thick, firm paste. If any dough sticks to the sides of the pot, do not scrape it off.
  5. 5. Transfer the dough to a stand mixer fitted with the dough hook and add tapioca starch. Mix on medium speed for about 10 minutes, until it forms a sticky ball.
  6. 6. Bring the water back to a boil, then adjust the heat to keep it at a vigorous simmer. While the water is heating, dust a clean work surface with flour, transfer the dough to it, and knead for another 5 minutes, until smooth. Cover the dough with plastic wrap to prevent it from drying out.
  7. 7. Prepare a large ice-water bath and place it near the stove. Put 1 1/2 cups of the dough into a potato ricer, keeping the remaining dough covered. Position the ricer directly above the center of the pot of boiling water and press firmly to extrude the noodles. As you press, smoothly lower the ricer close to the water and shake it gently from side to side to break the ends of the noodles free, allowing the noodles to fall into the simmering water. Simmer the noodles for 1 1/2 to 2 minutes, until they bunch up to one side of the pot. With a spider or tongs, carefully transfer the noodles to the ice-water bath. Once cool, transfer to a colander and let drain. Repeat with the remaining dough, replacing the ice water as needed. When all the noodles have been cooked and cooled, rinse the noodles under cold running water to remove excess starch. Drain the noodles. The noodles are best used the same day they are made, but they can be covered and refrigerated for up to 1 day.

Eggy Fried Rice Recipes

Introduce your kids to Chinese food with this tasty, quick, rice recipe

Ingredients:

  • 2 large spring onions , finely sliced
  • 1.0 tbsp soy sauce
  • 2 eggs
  • 85.0g carrots , diced
  • 25.0g butter
  • 85.0g frozen peas
  • 1.0 tbsp vegetable oil
  • 200.0g basmati rice (or use cooked rice)

Instructions:

  1. Wash the rice and cook according to pack instructions in lightly salted water with the diced carrots. About 5 minutes before it's ready, tip in the frozen peas.
  2. While the rice is cooking, heat the oil in as mall frying pan (about 20cm) and lightly beat the eggs with a little salt. Pour the eggs into the pan to coat the base, and cook until almost set as a thin omelette – this should take about 2-3 minutes. Flip the omelette and cook for a few seconds more, then slide it out of the pan and roll it up into a sausage shape. Keep warm.
  3. Melt the butter in a wok or large frying pan and sauté the spring onions for 1 minute. Fluff up the rice mixture with a fork (there should be no cooking liquid left). Tip into the wok with the soy sauce and a little salt and freshly ground black pepper, then stir fry for 2 minutes.
  4. Divide half the rice between two bowls, cut the omelette crossways into strips and scatter over the top. (Keep the remaining rice in a cool place for later.)

Perfect Sushi Rice Recipes

Ingredients:

  • 1 cup Rice Wine Vinegar
  • 1/2 cup Sugar
  • 1/4 cup Sake Or Mirin (a Japanese Rice Wine)
  • 4 cups Short Grain/sushi Rice

Instructions:

  2. Use short or medium-grain rice. It’s more starchy and round than the long-grain variety, which just won’t hold together well enough to support ingredients in sushi. Many stores now sell specifically-labeled “sushi rice.”
  3. Before you cook it, wash/rinse the rice until the water runs totally clear—about five or six times. If you don’t thoroughly rinse the rice, it’ll end up in a big, sticky ball. There’s enough internal starch in the rice for it to sufficiently hold together for sushi, so get all the stuff on the outside off by rinsing well.
  4. Use a rice cooker/steamer. Rice made on the stovetop will not work for sushi; it won’t be the right consistency. Rice cookers are widely available for as low as $12.
  5. Add the rinsed rice to the rice cooker with equal parts water, and follow the directions for the rice cooker. After it’s done, transfer the cooked rice to a large mixing bowl.
  6. You’ll need 1 part sushi su for every 4 parts rice.
  7. Heat vinegar, sugar, and sake or mirin in a saucepan just to dissolve and combine. Allow to cool to room temperature.
  8. Cook rice according to rice cooker directions. Transfer to large mixing bowl.
  9. Pour su (vinegar mixture) over the rice, gently folding to incorporate.
  10. Let rice stand for 10 minutes, then fold again.
  11. Rice should be shiny, not mushy and have a slightly tart/sweet taste. Cover with a warm, wet towel and keep warm.
