Lamb, Black Pudding & Mustard Hotpot Recipes

If you prefer traditional Lancashire hotpot, leave out the black pudding and the mustard

Ingredients:

  • 350.0g black pudding , thickly sliced
  • 8 lamb chops (middle neck cutlets), excess fat trimmed
  • knob of butter , melted
  • 700 ml/1¼ pints hot lamb or beef stock or a mixture of stock and water
  • 2 large onions , thinly sliced
  • 900.0g potatoes , peeled and very thinly sliced
  • 2.0 tbsp grainy mustard
  • 6 sprigs of thyme , leaves only
  • 20.0g pack parsley , finely chopped
  • 3 carrots , thinly sliced
  • 2.0 tbsp groundnut or sunflower oil (or dripping)

Instructions:

  1. Heat oven to 180C/fan 160C/ gas 4. Heat half the oil in a frying pan and cook the onions for 5 mins until they are soft and just starting to turn golden. Remove and set aside. Pour the remaining oil into the pan and fry the black pudding for about 1 min on each side. Remove, drain on kitchen paper and set aside.
  2. Cook the chops in the pan on a high heat so you get a good colour on the outside, but they’re not cooked, then drain off the fat. Set the chops aside.
  3. Layer the ingredients in a deep ovenproof casserole, which holds everything snugly, starting with some potatoes and carrots and dotting half the mustard over each layer of black pudding. Season as you build up the layers and sprinkle the herbs throughout. You should have two layers of chops and finish with overlapping potato slices.
  4. Pour the hot stock over everything, then brush the top with the melted butter. Cover and bake for 2 hrs, until everything is meltingly tender, removing the lid for the last half hour to crisp up the potatoes.

Caramel Rice Pudding recipes Recipes

Forget the British way of serving rice pudding with a dollop of jam and go for the French way of topping it with a drizzle of caramel sauce.

Ingredients:

  • 200 g (7 oz/1 cup) short-grain pudding rice
  • 1 vanilla pod
  • 900 ml (30 fl oz/33/4 cups) milk
  • 75 g (21/2 oz/3/4cups) caster (superfine) sugar
  • pinch of salt
  • 3 egg yolks
  • 50 g (2 oz/1/4 cup) butter
  • 150 g (5 oz/3/4 cup) light soft brown sugar
  • heavy cream

Instructions:

  1. Bring a small saucepan of water to the boil, add the rice and cook it for 2 minutes. Strain and set aside.
  2. Split the vanilla pod in half lengthways and scrape out the seeds. Place the pod and seeds in a large saucepan with the milk, sugar and salt and heat to a gentle simmer. Pour in the rice and stir well. Cover and simmer for 30–40 minutes, stirring occasionally to make sure the rice doesn't stick to the bottom of the pan. Remove from the heat when all the liquid is absorbed and the rice is tender.
  3. Remove the vanilla pod. Add the egg yolks, return to the hob and heat gently for a few more minutes, stirring occasionally. Remove from the heat, stir in the butter and leave to cool.
  4. To make the caramel sauce, heat the sugar in a saucepan over a medium heat. Keep an eye on it and stir frequently to ensure the sugar doesn't burn. When the sugar has melted remove the pan from the heat, leave to cool for about a minute, then slowly pour in the cream and stir until you have a smooth sauce.
  5. Pour the rice pudding into individual small serving dishes. Serve the caramel sauce on the side for guests to add their own.

Cognac Butterscotch Pudding Recipes

I was never a believer in butterscotch pudding until I made it from scratch. A shot of cognac helps, too.

Ingredients:

  • For the cognac butterscotch pudding:
  • 1/4 cup (4 tablespoons or 1/2 stick) butter (i prefer salted, but unsalted is good too)
  • 1 vanilla bean
  • 1 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 2 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 3 tablespoons cornstarch
  • 3 egg yolks
  • 1 tablespoon cognac
  • For the cognac whipped cream:
  • 1 cup heavy cream
  • 1/4 cup confectioner's sugar
  • 1 tablespoon cognac

Instructions:

  2. Begin by melting the butter in a medium saucepan over medium-low heat. Split open the vanilla bean and scrape out the seeds with the back of a small paring knife. Drop the bean and the seeds into the melting butter. Once the butter begins to bubble and brown, stir in the brown sugar and salt until the sugar is coated with the butter. Turn off the heat for a moment.
  3. Whisk together 1/4 cup of the milk with cornstarch until smooth and free from lumps. Add the egg yolks and whisk until blended.
  4. Pour the remaining whole milk and heavy cream into the brown sugar while whisking. Whisk in the cornstarch-milk-egg yolk mixture. Turn the heat back on and bring it to a boil over medium heat, whisking frequently. Once the pudding begins to bubble and thicken, lower the heat to a simmer, and whisk constantly, allowing the pudding to thicken a little more until you are able to coat the back of a wooden spoon. Remove from the heat, discard the vanilla bean, and stir in the cognac.
  5. Pour the custards into your serving cups and top each with a square of waxed paper or plastic wrap to prevent a skin from forming on the puddings. Place in the refrigerator for at least 4 hours to cool and thicken.
  6. Make the whipped cream by whisking the heavy cream in the chilled bowl of an electric mixer until thickened and soft peaks form. Add the sugar and cognac and whisk a little more. Keep chilled in a tightly sealed container.
  7. Serve with a dollop of cognac whipped cream.

A nice rice pudding Recipes

Try our recipe for a gorgeously creamy, yet low in fat rice pudding. Serve this comforting dessert with jam or fruit

Ingredients:

  • 100g pudding rice
  • 50g sugar
  • 700ml semi-skimmed milk
  • pinch grated nutmeg
  • 1 bay leaf, or strip lemon zest

Instructions:

  1. Heat the oven to 150C/130C fan/gas 2. Wash and drain the rice. Butter a 850ml baking dish, then tip in the rice and sugar and stir through the milk. Sprinkle in the nutmeg and top with the bay leaf or lemon zest.
  2. Cook for 2 hrs or until the pudding wobbles ever so slightly when shaken.

Elliott's Easy Chocy Pudding Recipes

A versatile chocolate pudding for those with little time to create something tasty and exciting by using up everything in the cupboard!

Ingredients:

  • 2 tbsp Boiling Water
  • 2 tbsp Creme Fraiche
  • 2 tbsp Cocoa Powder
  • 50 g Caster Sugar
  • 50 g Dark Chocolate
  • 50 g Butter
  • Chocolatey Creme Fraiche:
  • Dash of Vanilla Extract
  • 20 g Cocoa Powder
  • To Serve:
  • 2 tbsp Caster Sugar
  • Handful of Chopped Dark Chocolate (Optional)
  • 80 g Plain Flour
  • 1 tsp Baking Powder
  • For the sauce:
  • 1 Large Egg
  • For the Pudding:

Instructions:

  1. Weigh out the Sugar and Butter together, add to your mixing bowl and cream together.
  2. Add the Flour, Baking Powder, Cocoa, Egg, Vanilla Extract and chopped chocolate and then mix together. If very thick, add a little water.
  3. Now make your sauce in a small deep bowl (Any average bowl will do, something that you would put your cereal in and something that can go in the Microwave) Mix the Cocoa and Sugar together and add the water, stiring constantly till it becomes thick. Add the mixture to this bowl and cover with cling film. You could leave a space in the middle and add a little Nutella for melt-in-the-middle style.
  4. Place in the Microwave and depending on the power, cook on high for 2 and a half to 3 and a half minutes with the latter being the lower watt microwave.
  5. When the pudding is done, put aside for a minute or two while you make the Creme Fraiche- simply melt your chocolate in the microwave for 1-1 and a half minutes and then add your Creme Fraiche. Tip out your pudding and serve with the tangy Creme Fraiche. Heaven!
  6. Please Note: You can chop and change this and replace the Chocolate sauce with Lemon Curd or Toffee Sauce and exclude the Cocoa and use 100g Flour. You can also make this pudding less fattening with Olive Oil Spread and instead of flour you could use Ground Almonds.
