Mediterranean Rice Noodles Recipes

We love King Soba noodles on the Clean team and could easily find hundreds of uses for them. This is a delicious Mediterranean-flavored version of a noodle bowl, quick and easy, and perfect for those meals you need to have on the table as fast as possible.

Ingredients:

  • 1 package King Soba rice noodles
  • 2 to 3 tablespoons extra-virgin olive oil
  • 1/2 pound fresh green beans, ends snipped off
  • About 10 cherry tomatoes, halved
  • 1/4 cup pitted olives
  • 8 to 10 fresh basil leaves, torn
  • Zest and juice of 1 lemon
  • 1 to 2 teaspoons sea salt
  • Freshly ground black pepper

Instructions:

  1. Cook the rice noodles according to the directions on the package, then run them under cold water, and drain them well. In a medium bowl, toss the noodles with the olive oil.
  2. While the noodles are cooking, bring 4 cups of salted water to a boil. Have a bowl of ice water ready nearby. Blanch the green beans in the boiling water until they are tender and bright green, about 2 minutes, then remove them from the hot water and immediately submerge them in the ice water to stop the cooking. Drain them, and cut each bean into thirds.
  3. Stir the beans, tomatoes, olives, basil, lemon zest, lemon juice, salt, and pepper into the bowl of noodles. Adjust the seasonings to taste, and serve.

Honey-Garlic Noodles Recipes

One of the first ever Dennis the Prescott recipes, this little noodle dish is still crushing it on the Prescott family at-home bestseller list. This recipe was born as a way to cope when our beloved local noodle chef, Ming, traveled home to China every winter, leaving us almost losing our noodle-loving minds. These honey-garlic noodles are perfect as is, or as a side dish served with chicken, steak, or a fried egg or tossed with your favorite stir-fried veggies. The recipe comes together very quickly, so get everything diced, sliced, minced, and prepped first.

Ingredients:

  • 1/3 cup soy sauce
  • 1/2 cup mirin
  • 1 tablespoon toasted sesame oil
  • 4 garlic cloves, minced
  • 1 or 2 fresh bird’s-eye chiles, finely diced
  • 1 tablespoon honey
  • 12 ounces thin egg noodles
  • 2 tablespoons sunflower or vegetable oil
  • 1 tablespoon minced fresh ginger
  • 6 scallions, thinly sliced
  • 2 limes: 1 halved, 1 cut into wedges for serving
  • 1 tablespoon sesame seeds
  • Fresh cilantro or your favorite spicy herbs, for serving

Instructions:

  1. In a small bowl, combine the sauce ingredients. Stir and set aside.
  2. Bring a large pot of salted water to a boil and cook the noodles according to the package directions. When 1 minute of cooking time remains and the noodles are softened but firm, drain.
  3. In a wok, heat the sunflower oil over medium-high heat. When the oil is hot, add the noodles and ginger and stir-fry for 2 minutes, keeping the noodles moving the entire time.
  4. Pour in the sauce and cook for 1 minute, tossing to ensure that the noodles are completely coated. Turn off the heat.
  5. Toss in the scallions, squeeze the juice of the halved lime on top, and sprinkle on the sesame seeds. Give everything a good toss to mix and combine.
  6. Serve with the lime wedges and fresh cilantro or spicy greens.

Black Bean Pork With Noodles Recipes

A taste of the Orient while using up some of that left-over mince

Ingredients:

  • 2.0 tbsp vegetable oil
  • 2 crushed garlic cloves
  • 115.0g rice noodles
  • 450.0g minced pork
  • 1 red chilli , seeded and finely chopped
  • 2 cm piece freshly grated ginger
  • 6 spring onions , shredded
  • 350.0g jar black beans sauce

Instructions:

  1. Heat the vegetable oil in a large pan then add the garlic cloves, grated ginger and chopped large red chilli. Cook for 1-2 minutes until softened. Add the minced pork and cook, stirring, for 4-5 minutes until browned. Stir in a jar of black bean sauce and cook for 3-4 minutes. Meanwhile, cook the rice noodles according to pack instructions. Drain and toss with the pork and shredded spring onions.

Tasty Chicken Noodles Recipes

This recipe is easily doubled to serve four if you have plenty of leftover chicken; if you have less, bump up the protein with a handful of cashews

Ingredients:

  • 2 garlic cloves , thinly sliced
  • 1 large red pepper , chopped
  • ½ a 20g pack basil or coriander, leaves roughly shredded
  • 2 tsp cornflour
  • 1 tsp ground coriander
  • 1 tbsp sunflower oil
  • 2 blocks medium egg noodles
  • 1 tbsp sugar
  • 4 spring onions , sliced
  • ½ tsp chilli powder
  • 2 tbsp fish sauce or soy
  • 100.0g frozen peas
  • 200.0g leftover roast chicken , shredded

Instructions:

  1. Mix the cornflour with the fish sauce and sugar, then gradually add 8 tbsp water until smooth. Cook the noodles in a pan of boiling water for 4 mins.
  2. Meanwhile, heat the oil in a wok, then stir-fry the pepper, garlic and spring onions for about 3 mins. Tip in the chicken, spices and peas, stir-fry for a couple of secs more, then pour in the fish sauce and flour mix. Stir until thickened, then toss in the drained noodles and basil or coriander.

Szechuan Sesame Noodles Recipes

Spicy Szechuan dishes were quite the thing in the seventies; around that time, pasta was also coming into its own. This recipe features ingredients that are widely available in the Asian foods section of most markets. If you like, add snow peas and sliced red bell pepper for some crunch.

Ingredients:

  • 8 ounces thin dried Asian noodles or linguine
  • 4 tablespoons oriental sesame oil
  • 3 tablespoons chopped peanuts
  • 2 tablespoons finely chopped peeled fresh ginger
  • 3 large garlic cloves, minced
  • 6 tablespoons bottled teriyaki sauce
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili-garlic sauce
  • 1 1/2 cups thinly sliced green or red onions

Instructions:

  1. Cook noodles in large pot of boiling salted water until tender but still firm to bite. Drain; return noodles to same pot. Mix in 1 tablespoon oil and peanuts.
  2. Heat 3 tablespoons oil in heavy small skillet over medium-low heat. Add ginger and garlic; stir 10 seconds. Add teriyaki sauce, lime juice and chili sauce; simmer 30 seconds. Mix sauce and onions into noodles. Season with salt and pepper. Serve warm or at room temperature.

Gingery Shiitake Noodles Recipes

Whatever you do, don’t cut your noodles – they represent long life!

Ingredients:

  • 2 tbsp good-quality oyster sauce
  • 2 tbsp groundnut oil
  • 8 spring onions , cut into thirds, then thinly sliced into lengthways strips
  • 300.0g fresh shiitake mushrooms , sliced
  • couple dashes toasted sesame oil
  • 375.0g pack medium dried egg noodles
  • finger-length piece fresh root ginger , grated
  • 2 tbsp light soy sauce

Instructions:

  1. Cook the noodles according to pack instructions, then toss with a little sesame oil to stop them sticking.
  2. Heat a wok over a high heat, then add the groundnut oil. Once it’s smoking, add the ginger, stir-fry for a couple of secs, then add the mushrooms with a splash of water to create steam, and cook for 1 min. Toss through the cooked noodles for 2 mins until hot, then add the spring onions, oyster and soy sauces, and a dash more sesame oil.

Ingredients:

Peppery Prawn Noodles Recipes

A quick and easy stir-fry makes a great after-work supper

Ingredients:

  • vegetable oil
  • 2 bok choi , leaves separated
  • 1 red chilli , deseeded and sliced
  • 200.0g pack raw peeled prawns
  • 1 tsp lightly crushed black peppercorn
  • handful bean sprouts
  • 100.0g pack baby corn
  • 250.0g dried egg noodles

Instructions:

  1. Boil the dried egg noodles according to pack instructions, then drain.
  2. Fry the lightly crushed black peppercorns in a little oil along with the red chilli, baby corn and bok choi leaves. Stir-fry for 1 min, add the raw peeled prawns, then fry until pink.
  3. Add the noodles, a handful of beansprouts and heat through.

Easy Noodles Recipes

This simple version of a Malaysian classic is microwaved in a single bowl – an easy supper for 4

Ingredients:

  • 1.0 tsp ground turmeric
  • 300 g bag stir-fry mix, pick one with bean sprouts
  • 1 x 250g pack medium rice noodles
  • 400 ml can coconut milk (full or reduced fat)
  • 500.0ml hot chicken stock or vegetable stock
  • 1.0 tbsp green or red Thai curry paste
  • 3 skinless boneless chicken breast fillets , sliced

Instructions:

  1. Firstly, get the kettle on. Tip the stock, coconut milk, Thai curry paste, turmeric and chicken into a big microwaveable bowl. Cover with cling film, pierce it a few times and microwave on High for 5 mins. Remove the cling film, give it a stir and cook for a further 5 mins until the chicken is cooked.
  2. Meanwhile, tip the noodles into another large bowl. Pour boiling water over, leave to soak for 4 mins, then drain.
  3. Add the stir-fry mix and noodles to the chicken, ladle into deep bowls and serve with spoons and forks.
