Gingersnap Cookies Recipes

Chewy spicy cookies, perfect with a pot of tea or a glass of milk.

Ingredients:

  • 3 ¾ cups all-purpose flour
  • 3 teaspoons baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 teaspoons grated fresh ginger
  • ¼ cup molasses
  • ¼ cup honey
  • 2 teaspoons fresh lime juice
  • Additional granulated sugar to top cookies

Instructions:

  1. Preheat oven to 350º
  2. Put flour, baking soda, cinnamon, cloves, ginger and kosher salt into large bowl and stir with wire whisk to combine.
  3. Beat butter until soft, add brown sugar and granulated sugar.
  4. When the butter/sugar mixture is combined, add eggs and grated fresh ginger and beat until mixture is fluffy.
  5. Beat in molasses, honey and lime juice and gradually add flour mixture and mix until flour is incorporated.
  6. Chill dough in freezer for 30 minutes, until it is stiff enough to be formed into ¾ inch balls.
  7. Roll balls into granulated sugar, bake for 10 minutes on cookie sheets lined with parchment paper.
  8. Transfer cookies to cooling rack.

Caramel Pecan Cookies Recipes

Active time: 1 hr Start to finish: 4 hr (includes cooling)

Ingredients:

  • Ingredients for basic butter cookies
  • 1 1/2 cups sugar
  • 1 cup heavy cream
  • 3/4 stick (6 tablespoons) unsalted butter, cut into bits
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 cups pecans (1/2 lb), toasted , cooled, and coarsely chopped

Instructions:

  1. Grease a 13- by 9-inch metal baking pan, then line with foil, leaving a 2-inch overhang on both ends, and grease foil.
  2. Follow recipe for basic butter cookies to make dough (do not chill), then press dough evenly onto bottom of baking pan, using plastic wrap on top to prevent dough from sticking to your fingers, and chill until firm, about 20 minutes.
  3. While crust chills, put oven rack in middle position and preheat oven to 375°F.
  4. Bake crust until golden brown, about 30 minutes. Cool in pan on a rack 20 minutes. (Leave oven on.)
  5. Cook sugar in a 2 1/2- to 3-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted to a deep golden caramel. Tilt pan and carefully pour in cream (caramel will harden and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved. Remove from heat and stir in butter, vanilla, salt, and pecans.
  6. Immediately spread topping over cooled crust and bake until bubbling, about 20 minutes. Cool completely in pan on rack, about 2 hours.
  7. Run a heavy knife under hot water, then wipe dry and cut confection into 2-inch triangles, diamonds, or squares.

Shortbread Cookies With Nutella, Bananas And Almonds Recipes

Ingredients:

  • 24 x shortbread cookies – I used Walker
  • 1/2 cup Nutella
  • 2 x bananas, sliced
  • 1/4 cup chopped almonds

Instructions:

  1. With your non-dominant hand, hold up your first three fingers. Slightly cup your hand and gently grasp a shortbread cookie by its edge. Position your hand so that your thumb is closest to your body, let's call this 6-o'clock position.
  2. Get a butter knife and with the non-serrated edge, scoop out exactly 1 teaspoon of Nutella. Position your knife at a 45-degree angle, serrated edge side down (using the serrated edge will give you ugly “teeth” marks on your cookie) above the cookie, pointing at the 12-o'clock position. Your cookie hand should still have your thumb positioned at 6-o'clock.
  3. Take a few calming breaths to relax and center your chi.
  4. Everything in this next step happens in one motion, so you might want to read this a couple of times over and practice the motions before proceeding. Lower your knife and in one flowing motion, rotate the knife counter-clockwise until you reach the 8-o'clock position. At the precise moment that the knife reaches this point, slowly rotate your cookie hand so that your thumb is now at the 9-o'clock position. When the Nutella swoop is complete, lift your knife from the cookie and follow through with a graceful wrist twirl.
  5. Top with bananas and almonds.

Ingredients:

  • 1/4 cup popcorn kernels or 1 bag popcorn, popped
  • 12 oreo cookies, coarsely crushed
  • 6 ounces white chocolate, melted

Instructions:

  1. Mix the popcorn, crumbled cookies and melted chocolate until well combined, spread the mixture out on a baking sheet and let sit until the chocolate has set. (Tip: Chill in the fridge if you want the chocolate to set faster.)
  2. Break any large clumps up and enjoy!
