No-oven pizza Recipes

This superhealthy pizza, from Amanda Gould, is cooked in a frying pan making it the perfect food for camping

Ingredients:

  • 225g self-raising flour
  • 3 tbsp olive oil, plus extra for frying
  • 1 tsp olive oil
  • 1 onion, sliced
  • 3 garlic cloves, crushed
  • 250g pack cherry tomatoes, halved
  • 4 tbsp passata
  • handful fresh basil leaves, chopped
  • 50g cheddar, grated

Instructions:

  1. Heat the oil in a frying pan, then add the onion and garlic and cook for 5 mins. Tip in tomatoes and passata, and simmer for 5-10 mins or until the tomatoes are soft. Remove from the heat, stir in the basil, season, then allow to cool.
  2. Put the flour into a bowl. Make a well in the centre, add the olive oil then add 6-7 tbsp warm water or enough to make a soft dough. Tip the dough onto a lightly floured surface and roll out to fit a 22cm frying pan or make 2 small ones. Heat a glug of olive oil in the frying pan, then press the dough into the pan and cook over a medium heat for 8-10 mins or until the base is golden.
  3. Heat grill to hot. Spread the pizza base with the tomato sauce, scatter on the cheese and grill until it has melted and the base is golden at the edges. Serve immediately.

Ingredients:

  • 6 dark plums, halved and pitted
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon sugar
  • 1/2 cup 2 percent Greek yogurt
  • 2 tablespoons hazelnuts, toastedin the oven at 375°F for 7 minutes, chopped
  • 2 teaspoons honey

Instructions:

  1. Heat oven to 375°F. Line a baking sheet with parchment paper. Place plums cut side up on sheet, brush with butter and sprinkle with sugar. Bake until soft and some juices run off, about 15 minutes. Divide among 4 bowls, top each with 2 tablespoons yogurt, sprinkle with nuts and drizzle with honey.

Oven-Fried Chicken with a Corn Flake Crust Recipes

To reduce the fat, remove the chicken skin before coating.

Ingredients:

  • Position a rack in the upper third of the oven. Preheat the oven to 350°F. Lightly oil a baking sheet.
  • 3 1/2 pounds chicken parts
  • Salt and ground black pepper to taste

  • 1/4 cup milk
  • 2 1/2 cups crushed corn flakes
  • 2 teaspoons salt

Instructions:

  1. Dip the chicken pieces in the egg mixture, then coat with the corn flake mixture, patting with your fingers to make the crumbs adhere. The chicken can be prepared to this point up to 3 hours in advance and kept, uncovered, in the refrigerator. Arrange the chicken skin side up on the baking sheet. If you wish, drizzle over the chicken:
  2. 2 to 3 tablespoons melted butter
  3. Bake until the chicken is crisp and golden, 45 to 60 minutes. Serve immediately or at room temperature.

Thick-cut oven fries are delicious—and so easy, especially if you don’t have time to make the deep-fried version. Use russet or purple potatoes, or a mixture of both.

Ingredients:

  • Nonstick vegetable oil spray
  • 2 pounds unpeeled russet potatoes or purple potatoes, scrubbed, cut lengthwise into 1/2- to 1/3-inch wedges
  • 2 tablespoons canola oil

Instructions:

  1. Preheat oven to 450°F. Spray large rimmed baking sheet with nonstick spray. Toss potato wedges with canola oil in large bowl. Sprinkle potato wedges generously with salt and pepper; spread in single layer on prepared baking sheet. Roast potato wedges until tender and brown in spots, turning occasionally, about 45 minutes. Sprinkle with salt and pepper and serve.

Oven Roasted Asparagus Recipes

This is one of the most ridiculously simple vegetable dishes in existence. It can be served on its own or used in any number of side dishes or salads.

Ingredients:

  • 1 bunch Asparagus
  • 4 tbsp (up To 5 Tablespoons) Olive Oil
  • Kosher Salt To Taste
  • Freshly Ground Black Pepper, To Taste

Instructions:

  1. Preheat oven to 425 degrees.
  2. After you wash the asparagus thoroughly, stack a bunch together and lop off the tough/thick bottom an inch or so.
  3. Spread out the asparagus in a single layer on a rimmed baking sheet. Pat it as dry as you can, as you don’t want any water to “steam” the asparagus in the oven.
  4. Begin by generously drizzling olive oil all over the asparagus and then sprinkle the asparagus generously with kosher salt and freshly ground black pepper.
  5. Roast the asparagus for about ten minutes. The secret here is for the oven to be very hot so the asparagus can begin to brown on the outside without overcooking and getting too flimsy. You want the finished asparagus to still have a bite to it.
  6. Enjoy!

Try these oven-roasted chips, far less fatty than their fried cousins

Ingredients:

  • 6 large floury potatoes , such as Maris Piper, King Edward, Desirée (about 1.6kg/3lb 8oz)
  • 2 tbsp olive oil
  • 1 tsp celery salt
  • flaked sea salt , to serve

Instructions:

  1. Heat oven to 200C/fan 180C/gas 6. Peel 6 large floury potatoes and cut them into long chip shapes – the thickness you do is entirely up to you, though the width of your finger is ideal.
  2. Rinse under the cold tap and pat dry with a tea towel.
  3. Spread the chips on a large non-stick baking tray and toss with 2 tbsp olive oil and 1 tsp celery salt. Lie them flat in a single layer – use two trays rather than overcrowd one.
  4. Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on flaked sea salt to serve.

Roast Pheasant With Ricotta & Parma Ham Recipes

For a really special Sunday lunch pheasant is a good choice. The parma ham crisps us beautifully in the oven and gives the pheasant an eye-catching edge

Ingredients:

  • 3.0 tbsp freshly grated parmesan
  • 150.0ml extra-dry vermouth
  • 2 oven-ready pheasants , washed and dried
  • 90.0g pack Parma ham
  • 140.0g ricotta
  • olive oil , for drizzling
  • 1.0 tbsp thyme leaves , plus some sprigs

Instructions:

  1. Heat oven to 220C/fan 200C/gas 7. Separate the layers of Parma ham and chop two slices finely. Mix the ricotta, chopped ham, thyme and Parmesan with some seasoning.
  2. Carefully ease the skin away from the breast meat of each pheasant and use half the stuffing per bird, pressing it to the contours of the breasts through the skin. This protects the meat from the heat and will stop it drying out. Poke some sprigs of thyme into the body cavity to add flavour.
  3. Put the pheasants in a roasting tin and top each one with the remaining ham. Season with pepper, then pour over the vermouth and drizzle with oil.
  4. Roast for 20 mins, then turn down the heat to 180C/fan 160C/gas 4 and cook for 40 mins more, basting every now and then with the pan juices until the legs are no longer pink. Cover with foil and a tea towel and leave to stand for 10 mins before carving. Serve with wilted spinach and potatoes prepared however you like them.

Spinach and Oven-Roasted Tomato Omelet recipes Recipes

Ingredients:

  • 1 tablespoon olive oil
  • 4 large eggs, beaten
  • 1 cup baby spinach leaves, washed and dried
  • 1/2 cup oven-roasted tomatoes, roughly chopped
  • 1/2 cup Feta cheese, crumbled

Instructions:

  1. Heat the olive oil in a small non-stick pan over medium-low heat.
  2. Saute the spinach for 2-3 minutes, or until wilted, then add the tomatoes and toss to combine. Using a spatula, spread the vegetables evenly over the surface of the pan.
  3. Pour in beaten eggs and shake pan to distribute evenly. 
  4. When bottom is set, about 2 minutes, loosen the omelet from the pan to prevent sticking. Sprinkle the feta cheese evenly on one side, then flip the other side over to cover completely. Cook until golden brown, then flip the omelet and cook for a minute on the other side. 
  5. Cut omelet in half using a plastic spatula (we're not fancy), transfer to two plates and serve hot.
