Rolled Stuffed Meat With Tomato Sauce Recipes

Ingredients:

  • 2 14-oz. cans crushed tomatoes
  • 2 cloves garlic, peeled and finely chopped
  • 3 tbsp. extra-virgin olive oil
  • Salt and freshly ground black pepper
  • For the meat:
  • 6 sprigs fresh basil
  • 4 8-oz. pieces veal or beef top round, pounded to 1/4″ thickness
  • 1 tsp. garlic powder
  • 4 tbsp. toasted pine nuts, finely chopped
  • 2 hard-cooked eggs, peeled and finely chopped
  • 2 tbsp. raisins
  • 4 cloves garlic, peeled and finely chopped
  • 4 tbsp. freshly grated parmigiano-reggiano
  • 1/4 cup vegetable oil

Instructions:

  1. For the sauce: Put tomatoes, garlic, oil, and 1 cup water into a large saucepan and simmer over medium heat, stirring occasionally, until sauce thickens slightly, about 15 minutes. Season to taste with salt and pepper and set aside.
  2. For the meat: Chop leaves from 2 of the sprigs of basil and set aside. Working with 1 piece at a time, put meat on a clean surface with one of the narrow ends facing you. Season with some of the granulated garlic and salt and pepper to taste. Scatter one-quarter of the pine nuts, eggs, raisins, chopped garlic, chopped basil, and parmigiano-reggiano along edge of meat closest to you, leaving about a 1⁄2″ border on either side. Fold long sides of meat over filling by about 1⁄2″ on either side, roll up snugly, and tie securely with kitchen twine.
  3. Heat oil in a medium heavy-bottomed pot with a tight-fitting lid over medium-high heat. Add braciole and brown all over, about 5 minutes. Add reserved sauce, scraping browned bits stuck to bottom of pot with a wooden spoon. Season to taste with salt and pepper and bring to a simmer. Cover pot, reduce heat to medium-low, and gently simmer, turning braciole occasionally, until very tender, about 1 1⁄2 hours for the veal or about 3 hours for the beef.
  4. Transfer braciole to a cutting board; cut off and discard twine. Slice braciole crosswise and transfer to 4 warm plates. Spoon sauce on and around braciole and garnish with parsley and the remaining 4 sprigs basil.

Crab-Meat-Stuffed Sole Recipes

Ingredients:

  • 4 oz jumbo lump crab meat (1 cup)
  • 1 1/2 tablespoons reduced-fat (not low-fat) mayonnaise
  • 1/4 cup finely diced yellow bell pepper
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 4 (4-oz) gray sole fillets
  • 1 small garlic clove, minced
  • 2 teaspoons extra-virgin olive oil
  • 1/4 cup fine fresh bread crumbs (preferably from a baguette)
  • 1 teaspoon finely grated fresh lemon zest

Instructions:

  1. Preheat oven to 450°F.
  2. Mix crab, mayonnaise, bell pepper, and parsley and season with salt and pepper.
  3. Lay sole fillets flat with darker side up and season with salt and pepper. Divide stuffing among fillets, mounding on thicker half of each. Fold thinner half of fillet over stuffing, tucking end under to form a packet.
  4. Arrange stuffed fillets in a lightly oiled 9-inch pie plate. Cover with a round of parchment paper, then cover pie plate tightly with foil.
  5. Bake in upper third of oven until just cooked through, about 20 minutes.
  6. Cook garlic in oil in a small skillet over moderate heat, stirring, until fragrant, about 30 seconds. Stir in bread crumbs and cook, stirring, until golden brown, 4 to 5 minutes. Remove from heat, then stir in zest and season with salt and pepper.
  7. Transfer sole to plates and pour pan juices through a fine sieve into a small bowl. Spoon some of juices over fish and sprinkle with bread crumbs.

  • 1/4 cup extra-virgin olive oil
  • 1 small yellow onion, peeled and minced
  • 1 rib celery, trimmed and minced
  • 1/2 medium carrot, peeled, trimmed, and minced
  • 2–3 slices prosciutto di parma (about 1 oz.), finely chopped
  • 2 chicken livers, finely chopped
  • 1 1/2 lbs. ground chuck
  • Salt and freshly ground black pepper
  • 1/2 cup dry white wine
  • 1 cup hot milk
  • 1 cup beef, veal, or chicken broth
  • 1 28-oz. can italian plum tomato purée

Instructions:

  1. Heat oil in a large heavy-bottomed pot over medium heat. Add onions and cook, stirring frequently with a wooden spoon, until soft and translucent but not browned, about 3 minutes. Add celery and carrots and cook, stirring frequently, for 3 minutes more. Add prosciutto and chicken livers and cook, stirring, until livers are just cooked and still a little pink, about 1 minute. Add ground chuck, season to taste with salt and pepper, and cook, breaking up meat with the back of the spoon, until just cooked and still a little pink, about 5 minutes more. (To keep meat tender, do not fry or brown.)
  2. Add wine to pot and cook, stirring, until it has evaporated, about 3 minutes. Reduce heat to medium-low, add hot milk, and cook, stirring occasionally, until milk has evaporated, about 10 minutes.
  3. Meanwhile, heat broth and tomato purée together in a medium saucepan over medium-high heat until hot, then add to meat mixture in pot. Reduce heat to low and gently simmer, stirring occasionally, for 2 1⁄2 hours. Season to taste with salt and pepper.

Instructions:

  1. Heat oil in a large wide pot over medium heat. Add onions and cook until golden, 8–10 minutes. Add garlic and meat and cook until meat is browned all over, about 10 minutes.
  2. Add tomatoes and enough water (1–1 1⁄2 cups) to pot to just cover meat, scraping any browned bits on bottom of pot with a wooden spoon. Season to taste with salt and pepper. Bring to a boil, reduce heat to medium-low, and simmer, covered, until meat is tender, 1 1⁄2–2 hours.
  3. Add favas to pot and increase heat to medium. Cover pot and simmer stew until favas and meat are very tender, 20–25 minutes. Uncover pot and let stew cook until sauce has reduced and thickened a bit, about 10 minutes more. Adjust seasonings. Serve stew with rice.

  • 2 pounds ground pork
  • 1/2 pound ground chicken
  • 6 ounces cooked chicken sausages (about 2 medium links, casings removed), chopped
  • 1 tart apple (such as Granny Smith), peeled and grated
  • 1/3 cup diced onion
  • 1/3 cup bread crumbs
  • 2/3 cup cream (or evaporated milk — any fat content is fine)
  • 1 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper to taste
  • 1 egg, plus 3 hard-boiled eggs

Instructions:

  1. 1. Preheat oven to 350°F. Spray a 9-by-5-inch loaf pan with cooking spray.
  2. 2. In a large bowl, combine all the ingredients but the hard-boiled eggs.
  3. 3. Press half the mixture into the pan, then gently press in the hard-boiled eggs, end to end. Mold the remaining mixture on top.
  4. 4. Cover with foil and bake until the juices run clear when you poke the loaf with a sharp knife, 1 1/2 hours.
