The New Bee's Knees Recipes

Here’s an easy cocktail that is sure to be the buzz of your next dinner party. The Bee’s Knees gets its sweetness from a quick-to-prepare honey syrup. And we’ve given this classic drink a floral, Provençal twist by adding lavender. The result is unexpected and delicious: a perfect balance of sharp, fragrant, sweet, and strong.

Ingredients:

  • 1/4 cup hot water
  • 1 teaspoon dried lavender blossoms*
  • 1/4 cup honey
  • 6 tablespoons gin
  • 2 tablespoons lemon juice

Instructions:

  1. Mix hot water and dried lavender blossoms in bowl. Let steep 5 minutes. Whisk in 1/4 cup honey. Strain into another bowl. Add 3 tablespoons of the honey syrup, gin, and lemon juice; strain into cocktail shaker with ice. Shake well and strain into 2 chilled Martini glasses.

Ingredients:

  • 2 ounces (1/4 cup) fresh grapefruit juice
  • 1 1/2 ounces (3 tablespoons) rye whiskey

Eggless Raspberry & Coconut Tiramisu Recipes

A poetic take on Tiramisu…blended with a bit of summer

Ingredients:

  • 1 cup fresh raspberries
  • 1 heaped tablespoon raw sugar
  • 6 tablespoons brandy or any fruit liqueur
  • 8 oz mascarpone cheese, at room temperature
  • 1 cup coconut milk
  • 1 cup whipped cream
  • ½ cup raw sugar
  • ½ cup coconut flakes
  • 1 teaspoon pure vanilla extract
  • 1 packet chocolate ladyfingers (16 pieces)
  • ½ cup strong espresso (or 2 tablespoons instant coffee in hot water)
  • 1 cup raspberries for layering
  • Drinking chocolate for dusting

Instructions:

  1. Heat 1-cup raspberries with the sugar in a non-stick pan on medium heat. Cover and cook till the raspberries are soft and melt down. Continue to cook till the sugar and raspberries blend and form a jam like mixture. Remove from heat and cool. Once cooled, add 4 tablespoons of the brandy or liqueur in and keep aside to let the flavors fuse.
  2. Using an electric mixer or eggbeater, beat the coconut milk, cream, sugar, and vanilla in a large bowl until the mixture thickens slightly and soft peaks form. Slowly fold in the mascarpone into this. Now fold the raspberry jam in, spoon by spoon. Do not over mix but let it form ribbons of pink in the white. We do not want it to be a homogeneous pink mixture. Keep aside.
  3. Combine the espresso with the remaining 2 tablespoons of brandy. Line your dessert bowl with half of the ladyfingers and soak them in the espresso. Make sure you get each corner of the biscuits soaked well. Spread half of the mascarpone mixture over the ladyfingers and cover with some fresh raspberries and coconut flakes. Repeat the layering with the remaining ladyfingers, mascarpone mixture, coconut flakes and raspberries. In the end, dust with cocoa powder. Cover and refrigerate overnight. I let it sit for 24 hours as the longer it sits, the better it will taste!
  4. You will be happy you made (and ate) this!

Stone Crab Claw and Shrimp Cocktail Recipes

Ingredients:

  • 1⁄2 small celery root, peeled and julienned
  • 1⁄4 cup white wine vinegar
  • Salt
  • 3 tbsp. mayonnaise
  • 2 tsp. dijon mustard
  • 2 tsp. fresh lemon juice
  • 1⁄2 granny smith apple, peeled, cored, and julienned
  • 24 large shrimp, peeled with tail shells intact, deveined, boiled, and chilled
  • 3 cups baby spinach, washed, dried, and cut into thin strips
  • 1 tbsp. extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 3⁄4 cup seafood cocktail sauce
  • 6 large stone crab claws, chilled, arms separated and reserved for another use
  • 6 lemon wedges

Instructions:

  1. For the rémoulade: Put celery root, vinegar, 1 cup water, and 2 pinches salt into a medium pot. Bring to a boil over medium-high heat and cook until celery root begins to soften, about 3 minutes. Remove pot from heat and set aside to allow celery root to cool in the cooking liquid, about 1 hour. Strain and set aside. Combine mayonnaise, mustard, and lemon juice in a medium bowl. Add celery root and apples and toss until well coated. Season to taste with salt. Cover with plastic wrap and refrigerate until chilled.
  2. For the cocktail: Make 12 sets of interlocking shrimp by hooking 2 of them together at the waist, then set aside. Toss spinach and oil together in a large bowl until leaves are well coated, then season to taste with salt and pepper. Divide spinach equally among six 6-ounce martini glasses, spoon equal quantities of rémoulade over spinach in each glass, then spread equal quantities of cocktail sauce over rémoulade, smoothing surface with back of spoon. Tuck 1 crab claw, meat side down, into center of each cocktail and arrange 2 sets of shrimp on either side of claw. Chill in refrigerator for about 1 hour, then serve garnished with lemon wedges.

Kentucky Vs. Morocco Cocktail Recipes

Ingredients:

  • FOR THE INFUSED BOURBON
  • 26 oz. bourbon
  • 1 cup currants
  • ½ cup golden raisins
  • FOR THE MOROCCAN SIMPLE SYRUP
  • 4 cups sugar
  • ½ tsp. ground coriander
  • ½ tsp. ground ginger
  • ½ tsp. cinnamon
  • ½ tsp. whole black peppercorns
  • 3 cloves
  • Pinch of salt
  • Pinch of cayenne pepper
  • FOR EACH COCKTAIL
  • 1 oz. fresh lime juice
  • 5 mint leaves, plus one mint sprig for garnish

Instructions:

  1. Make the infused bourbon: Put all bourbon ingredients in a glass jar. Seal. Keep at room temperature, shake daily. Bourbon will be sufficiently infused after four weeks, but a longer infusion leads to deeper flavor. Bourbon will keep indefinitely.
  2. Make the Moroccan simple syrup: Combine sugar with 4 cups water in a medium saucepan over medium-high heat. Bring to a boil, stir until sugar is fully dissolved. While simple syrup is still hot, add all spices. Cool to room temperature, transfer to an airtight container, and allow mixture to steep overnight. After 24 hours, strain out solids through cheesecloth or a coffee filter. Syrup will keep for up to 2 weeks, refrigerated.
  3. Make the cocktail: In a 12 oz. tin cup, muddle mint leaves. Add bourbon (straining out any fruit solids) and lightly muddle again. Add lime juice and syrup, and fill cup halfway with crushed ice, adding more syrup if desired. Top with more crushed ice, and garnish with a sprig of mint.

Cosmopolitan Champagne Cocktail Recipes

We thought we would update the popular Cosmopolitan by substituting Champagne for the usual lemon vodka. We garnished the drinks with skewers of sugar-coated fresh cranberries (thawed frozen ones will work just fine, too).

Ingredients:

  • 1 1/4 cups Cointreau or Grand Marnier
  • 1 1/4 cups cranberry juice cocktail
  • 1/2 cup plus 2 tablespoons fresh lime juice
  • 3 tablespoons superfine granulated sugar
  • 4 cups chilled Champagne or other sparkling wine

Instructions:

  1. Stir together Cointreau, juices, and sugar and chill, covered, 2 to 6 hours. Just before serving, divide among 10 Champagne flutes and top off with Champagne.
